Whey Wheat Rye Bread

Ingredients

Serum 320 g
Fresh yeast 11 g
Wheat flour type 550 or premium 320 g
Whole grain rye flour 200 g
Butter 30 g
Sugar 1 tbsp
Salt 1 tsp

Cooking method

  • Knead the dough in the Mixer. I have a Bosch Mum 4405.
  • You can also knead the dough in HP on the Dough mode for 1 hour 30 minutes.
  • First kneading in a dough mixer 8 minutes
  • Leave the dough to rise in a bowl.
  • The second batch is 6 minutes. Remove the dough from the bowl and stretch and fold a couple of times to shape the bread.
  • Put the bread in a mold and leave to come up.
  • When the dough comes up twice, put in a preheated oven.
  • Preheat the oven to 250 gr
  • Bake 10 minutes at 250 g and reduce by 220 g and bake until tender.
  • Check the readiness of the bread with a temperature probe, the temperature should be 96 grams.
  • We take out the bread and let it cool.
  • The bread is fluffy and crispy.
