Ingredients

Fresh meat (pork neck or ribeye steak) 800 g
Unpeeled garlic cloves 10-12 pcs small
Freshly ground black pepper taste
Rosemary or sage (or optional)
Olive oil 2-3 st. l.
Natural stones by the number of guests or one large
Foil for wrapping stones
For cooking charcoal grill, oven, stove or fireplace
For the sauce:
Pomegranate sauce or concentrated pomegranate juice 100 g
Chopped strawberries 6 pcs.

Cooking method

  • In summer, guests often come to our dacha. And, of course, no one has invented a better dish like grilled steak or aromatic barbecue on charcoal. As always, there is one small but: my husband or one of the men in the process of cooking kebabs or grilling are forced to constantly leave the table, scurry back and forth. As a result, discrimination is evident: everyone is resting, and the chief of meat is working. For a small company, we have found such an original solution, which I want to offer you - to fry meat on hot stones, right at the table.
  • This idea is not new, but it is little used in our native land. While it's not really complicated, you just need to have a few good flat stones of medium size or one big one for everyone. The stones can be bought in specialized shops for bath equipment. And even if it rains and you cannot warm up the stones in the grill, you can heat them to the desired temperature in an ordinary oven, stove or fireplace.
  • One day we were lucky with good weather, despite our rainy summer. Managed to cook mini pork steaks on stones.

  • Preparation
  • - First of all, we choose good soft meat. A pork neck or, which is generally incredibly tasty and wonderful, a real ribeye steak will do.
  • - An hour before serving, we take our stones, wash and dry them. If you are going to reheat stones in coals or over a fire, wrap them in a double layer of foil to prevent them from getting dirty, and bury them in the coals for about an hour.

  • In the same way we do the same for the fireplace and for the stove. If you heat the stone in the oven, then you do not need to wrap it.

  • - Then we start preparing the meat. Cut the meat into wide cubes about 1.5 cm thick. Salt it, put it on a sheet of parchment. Top with pieces of garlic right in the peel. Pepper, sprinkle with rosemary, thyme or fresh sage. Fresh sage is especially suitable for pork. Pepper and top with a second piece of parchment or baking paper.
  • Next, we take a hammer, rolling pin or a special culinary press for beating meat and very well, almost to a translucent state, beat off our pieces between the layers of paper. We hold the paper at the ends so that the pieces of garlic do not fly out. In principle, you can grate the cubes with garlic in advance, and some do not like garlic at all. In this case, you need to use some kind of spicy salt.
  • Sprinkle our thin slices of meat with olive oil on one side.

  • - Now you can start cooking our mini steaks on the stone. We set the table, in front of each guest on a fireproof plate we lay out a pebble extracted from the coals (of course, the foil must be removed from the stone). And we proceed to the culinary celebration.
  • For some reason, it seems to me that this action has something of the call of the ancestors. But we are cultured people and will use small forks. By the way, the wooden handle of my favorite fork broke off, and the rest of the forks somehow did not fit into the big picture, and we thought of making a handle from fresh carrots - it turned out very funny.
  • And now we take and string the thinnest pieces of meat on a fork and simply spread them on the stone with the side splashed with oil. Fry on a stone on both sides for about 2 minutes until tender. The meat will first stick to the stone, but as soon as it is fried on both sides, the piece will immediately easily come off the stone, and you can turn it over to the other side.
  • If the stones are small in size (as in my photo) and are well heated, then their heat will be enough for about 20 minutes. A large well-heated stone keeps the temperature up to 40 minutes.
  • - For meat, you can make an original sauce from pomegranate sauce and chopped strawberries.
  • We got this idea of ​​cooking steaks after our dinner in a Viennese restaurant, where, however, they brought us a heated volcanic stone (it's my old dream to have it) and an almost ready-made huge steak, from which, as it cools, we could cut off pieces and reheat them on the stone ...
  • I got the preliminary preparation of small steaks from one TV show on the Food channel, where the chef prepared such mini-steaks from Australian ribeye.

I planned to fry ribeye meat, but due to unforeseen circumstances I had to make pork from pre-marinated in apple cider vinegar. It's delicious too!
