Zucchini in peanut sauce with mint (another option)

Ingredients

Zucchini 2 pcs
Bulb onions 2 pcs.
Olive oil 2 tbsp. l.
Walnuts * peeled 50 g
Mint 4 twigs
Sour cream 20% 100 - 150 g
Hard cheese 50 g
Salt pepper taste
Parsley 2 twigs

Cooking method

  • Wash the zucchini, dry it with a towel and cut into cubes, that is, I cut the zucchini small, I do not peel the peel and bones.)
  • Peel and chop the onion.
  • I cooked in a slow cooker.
  • On the Frying program, fry the onion in olive oil until soft, add sour cream, mix, simmer for 3 minutes.
  • Grind cheese, mint leaves, nuts in a blender. Be careful not to put the shells together with the nuts.
  • * I didn't have walnuts in the village store, but there was a Brazilian nut, oh how !! I used it.
  • Add zucchini, cheese and nut paste to the onion, stir, season to taste and simmer for 20 minutes on the program. You can mix the mixture once or twice.
  • Sprinkle the finished dish with chopped parsley.

  • Inspired by the previous RECIPE , from the remaining products I prepared another version of zucchini with the nut sauce I liked. It turned out a little less aesthetically pleasing, but also tasty. Plus, this option can be served for lunch instead of soup, since gravy is formed during stewing.

I edited a little for myself for not having any nuts, except for pine nuts, but peeling them is dreary.
Replaced nuts with bread crumbs. It turned out well.
I added a teaspoon of natural adjika to sour cream, replaced salt and herbs with it.
