Ingredients

Green asparagus 100 g
Water 500 ml
Fresh or defrosted green peas 400 g
Green basil (greens of your choice) 3 twigs
Garlic 1 clove
White wine vinegar 2 tbsp. l.
Salmon for serving

Cooking method

  • I suggest you try a surprisingly pleasant, delicate cold soup. Its zest is that it combines boiled green asparagus (and you can even use frozen) with fresh green peas (which can also be frozen). The main thing is to choose peas that are tender and with a thin skin. And the rest is literally five minutes.
  • Preparation
  • - Wash the asparagus, clean the rough skin at the base. Cut the stems from the bottom by 2-3 cm. Finely chop these pieces, cover with water and cook for 5-10 minutes.
  • - Remove from heat, add green peas, basil leaves, garlic clove vinegar, salt, pepper, olive oil and grind in a blender into a smooth puree. If desired, strain the soup through a sieve to make it more tender.
  • - Cut the salmon into thin slices. Cut the remaining asparagus stalks into thin slices with a peeling knife. Add salmon slices and asparagus to the cooled soup.
  • - Serve garnished with herbs, preferably with pea sprouts or watercress.
