Noodles with cottage cheese (recipe for catering establishments, 1968)

Ingredients

noodles or vermicelli, thin spaghetti (original / I took) 55gr / 220gr
water 125gr / 0.5l
cottage cheese 100gr / 400gr
egg 10gr / 40gr (1 pc. Category C2)
sugar 12gr / 60gr (slightly over the prescription)
oil drain. (original - margarine) for mold lubrication 4gr / 16gr
sour cream for coating the surface 5gr / 20gr
breadcrumbs (I have semolina) 5gr / 20gr
butter, sour cream or jam for serving

Cooking method

  • Insanely simple and delicious thing.
  • I took thin spaghetti (although this is not spaghetti, strictly speaking, but the so-called cappellini). Vermicelli seems to me really quite thin.
  • 1. Boil pasta without throwing it back in a colander (water will be absorbed).
  • 2. Add eggs, sugar, a little salt to the curd, mix (I beat it well with a mixer). I put in a little more sugar. Sweet tooth - add a little more, because the casserole is a little sweet. It tastes good to me, but lovers of sweets may not find it enough. But a little. Better pour yourself some jam. You can pour vanilla sugar.
  • 3. Mix pasta and cottage cheese.
  • 4. Put in a dish greased and sprinkled with breadcrumbs, grease with sour cream on top. You can also sprinkle with semolina. The casserole is moist due to cottage cheese. The same number with pasta, for example, will not work. There is simply nothing wet and semolina will remain a tough grain.
  • 5. Bake at 170-180 degrees (with convection) and 200-220 (without convection) for about 30-35 minutes. Tint as desired. I don't like heavily baked pasta. They become dry and tough on top, crusty. You are free to do as you like ...

  • 6. Allow to cool to a warm state and crack, without leaving the checkout, until all these ungrateful namesakes who live with you on the same living space have eaten everything!)))
  • Although it can be eaten hot, it keeps its shape. Here in the photo, it was only cut from the oven:

Note

Ofigenski soundly and tasty. Classics of Soviet cooking, by the way! The bun made a natural Armageddian in her plate, tousled the noodles mixed with sour cream and chomped so hard that we all rolled ... I got sick, I don't want to eat, but I can't refuse the noodles. This is a crime against humanity, yeah. And there are also noodles with liver, etc. Unsweetened subspecies, so to speak ... Where can I get a face that does not crack? ...

The fact that you can get sick - I can understand that, you can do that, but where did you find 32 ?? We have day 2 crazy rains and thunderstorms
Come on get treatment!

But I vaguely remember such a noodle maker from childhood, it seems like it was like that in the garden) I must try to portray, I definitely have no negative memories with him)

And thanks from me My mom fed this noodle maker in childhood and called it "grandma"

marina-asti,

We have showers and heat (the stuffiness is terrible) ... I don’t go outside for two days - you can die there ...

Be sure to portray the noodle ... He is sooooo nice.

My mother said that if I cook so much when I'm sick, it's scary to imagine what will happen next)). To be honest, today I only cooked noodles. And I finished the cake. Well, as I finished it, I honestly poured all the jelly for him on the floor and for a long time on all fours collected, mother and cake, and jelly, and syrup, which the dogs licked, and I stuck. I poured the jelly top of the cake and went to return it to the refrigerator. I only managed to make it to the hall when the sliding bots unbuttoned and an enchanting waterfall fell on my feet, on the floor and splashed on the walls))). My husband had just arrived and, seeing me on all fours with two watchdogs, said that I was sick in a strange and ornate way, and asked if my soul was in pain. At first I did not understand the catch of the question, and then I honestly told him that he was a fool!))). But then he devoured the souffle cake very dynamically, yes ...
Tancha
There are noodles, cottage cheese too. I showed the photo to my grandson, but about cottage cheese, no, no. She said the whipped sour cream was so baked. Tomorrow I'll see if he can slip through or not, otherwise I'll have to hamster alone. Natul, thanks for the recipe, maybe I'll shove cottage cheese into the kid.
Scarecrow
Tancha,

Quite good for sour cream. Cottage cheese is not felt there, like cottage cheese. Something sweet and sour, like cream. For a child, you can have a little more sugar. But for reliability, it is better to beat the cottage cheese with egg and sugar until smooth, so that the characteristic grains are gone (I shuranula with a planetary whisk mixer, then pasta in the bowl and stirred it with a spoon). And there is really a lot of cottage cheese in them, there is something to "fight" for))).
marina-asti
ScarecrowI'm lying over you!
Really well sick) Cakes, noodles
Here the husband "will return to the family" I will portray him, by the way, he said some things about semolina under the jelly, you do not know the recipe by chance?

The husband of Ukrainian sausage ate in the afternoon. But then in the evening I was polished and that was all. He also yelled for me to leave him immediately and stop feeding him (it hurts, right!))) The children, too, got by with noodles. And in the morning I bought awesome bacon (I was more or less conscious and not so sour as in the evening), so my meals today are like a garland: bacon-noodle-lard-noodle))).

Marina., precisely because we consider homemade the most delicious, catering recipes do not live in our kitchen, except, perhaps, lazy dumplings.
marina-asti
Tatyana, we didn't live before Natasha's recipes either, I associate lazy dumplings with childhood only with my mother, my husband did not even eat this, but began to read Natasha's recipes to him, so he remembered about these semolina meatballs, although he does not eat semolina porridge) but nice Noodle maker I wanted to try something.
Homemade is tastier for any, but it so happened that my mother does not cook very well, even now she rarely eats at her place, and the years of scientific and party work for the good of the country suggested food in public catering. Something still does not eat, but for some things apparently nostalgia torments))) I did not read her crazy pastries) I left it for the winter, I hardly cook or bake in the summer, but I am mentally preparing for "goodbye waist" on drums, rings and the rest)

Girls, I don't agree with you. Homemade is not tastier, right, categorically. Home execution - yes, I would rather agree. You are not bringing a portion from the dining room into your kitchen. You carry the recipe. These are two big differences. The vast majority of us can't invent anything better out of our brains than a culinary professional. We all use recipes. So it is here: public catering recipes are very verified, compiled by professionals, tested for years and years, whole institutes have worked on them. If they are made properly and from good products, this is a wonderful result. Because it was designed for the broad masses of the population, it was necessary to please. Therefore, now they need to be treated not as catering, but as a very solid cookbook. You are just cooking from an old cookbook.

After all, it's not for nothing that children en masse love table cutlets (at least in our childhood), although their mothers cooked their own, homemade ones!))) How many copies have been broken on this topic on the Internet - you can't imagine. Moms are trying to reproduce. My mom is a great cook, but there are a number of things that I adored in kindergarten and school. It's just a very good recipe. Hits, as they would say now. This must be used!)))

Girls, I don't agree with you.

no, no, I just agree with you, it was not a fountain with the expression of my thoughts yesterday)
For me, due to the current circumstances, public catering is not Soviet canteens and school / garden portions (somehow they passed me by), but a la canteen is now at work. This is what I don't like.Since my husband lived with Soviet catering much more than me and at the same time did not eat much at home until almost 50 years old, apparently he was so boring that scrambled eggs or porridge in the morning is perceived with a bang! Reading now the recipes that you are laying out - in terms of composition and technology, they do not contradict my some inner moods and beliefs, therefore all sorts of casseroles and others are of interest in my mind)) I just have no time to cook them, but I remembered everything and bookmarked them ! So I'm not at all against homemade food recipes!
Scarecrow
marina-asti,

I, probably, did not understand Tatyana as well as a result))). But she pushed such a speech!)))

Marin, I even once read about our food for schoolchildren (Soviet), someone from abroad responded. They compared the nutrition of children in different countries (in institutions such as schools and kindergartens), the accepted canons for school catering. They were delighted with our menus. After all, in kindergarten, as they fed in my time (now, by the way, it is very close, we have a menu posted every day, and I read pedantically): everything is boiled, stewed, baked, gravy, sauces, nothing spicy, nothing spicy, practically no semi-finished products ... Do you even know how to cook sausage cutlets and meatballs? They are baked. They are practically not fried. Place in a deep baking sheet, add water and stew / bake in the oven. Even the serving temperature is negotiable. For adults - hotter (I have already forgotten in numbers), for children - cooler.
Here we have the last menu in the kindergarten, which I remember, now I will reproduce it almost exactly: breakfast - millet milk porridge, a roll with butter, cocoa; lunch - cabbage soup with sour cream, boiled rice, chicken cutlet, compote; afternoon tea - gingerbread with ... I don't remember with what; dinner - pancakes with butter and sugar, tea. Damn !!! This is an idiot's dream, not a menu!))) If you cook this at home: with your own hands and from ideal products, there will be no end to happiness. Than pizza and jelly-like stuff from plastic cups in American schools - for sure.

I also really like consistency. So that you do it every time - and every time you get an almost perfect result. here the accuracy of Soviet recipes is simply irreplaceable, honestly. And sometimes you do - wow !! And sometimes - damn it, my hands would be kicked))). Well, not in the trash, of course, but just fine. And last time it was "wow!" I want it again the same way))).

And the recipes there are definitely good, don't go overboard. The only thing I have pierced on so far is on syrniki. Che, nothing clever came out of me. Hellishly fatty "pancakes" of some kind. either I messed up something, or ... I don't know, I have to try again))).
marina-asti
Oh, yes, about food in an American school, perhaps we will not develop the topic here, I remember it was not tasty at all))
For the rest, I am a consonant! And somehow I make syrniki more often by eye, as my mother taught in childhood, in general I will not say the proportions. At the same time, my mother has more cottage cheese, and my flour leaves more and my dad eats better))) By the way, according to the rules from the book, we must try and see whose they turn out to be more similar
Babushka
Nata, Thank you! A recipe from childhood ...
Get well! Take care of yourself!

marina-asti
Tancha, and how did you smell it?
I remembered another recipe with pasta from my childhood - milk soup! Interestingly, he is also catering? Or is it a mother who is banished over the children?)))
Scarecrow
marina-asti,

There are many dairy soups. It's a fork in the soup section. In fact, a million recipes existed long before catering. For example, Molokhovets has milk noodles and milk soups, and this, as you know, is from the 19th century. It's just that they have been adopted by the Soviet catering, fitted, run-in. It is unlikely that recipes were invented from scratch (although there probably are some), but what we and our ancestors already ate was taken as a basis.Of course, there is milk soup with pasta in the food service recipe. My mother fed them all my childhood too (in the sense, not them alone, of course, but was often))). Since the parents were employees of the chemical giant, they were entitled to milk. And we always had plenty of it. I think it's very tasty.Noodles with cottage cheese (recipe for catering establishments, 1968)

girls, hello, I'm capricious and baluvanny
Natakh, yes you understood me correctly, just everyone has their own experience and preferences, including culinary ones.
I was sent to the garden at the age of 3, before that - the consequences of maternity staphylococcus were reflected - very narrow preferences in the diet, or maybe not because of that, I did not drink milk, kefir current, did not eat boiled eggs, butter, porridge - current buckwheat. so my mother fed at home with breakfast and dinner, in the garden she asked me to eat at least soup, and I sipped the tasteless broth. I remember how my nanny, Nina Petrovna, out of pity for a hungry, but rather fat child, taught me a sandwich with butter, salting it. still not tasty in any other way.
Stolovskaya cutlets were several times one by one, like father's pampering, not food. me in them then was alarmed by the softness and unreal smell. pleasant, but not real, not crummy. and my friend, yes, adored only them, although her mother twisted it from the bazaar meat, and I was with them, for example, for a lenin's appetite, because I adored auntin's cutlets (and homemade ones too), as later my son adored auntin's cutlets))) he By the way, I didn't eat much in the garden either ... genes.
then in different pioneer camps everything was more or less edible, especially in Pushcha Voditsa near Kiev))) but also - even if it wasn't.
they always cooked at home, always delicious, especially when there was something) hello 90))) the school cafeteria was built for us just at the end of the 9th grade, in the 88th. the rolls were edible while hot, but while there was - cabbage salad)))
and it so happened that I really am far from all sorts of casseroles, meatballs, it is not mine, and judging by the fact that half of my life is already behind, it is unlikely that anything will change in preferences, I am conservative.
Natakh, come on, get well soon !!!

Sonz, but I understand that our experiments are all, and good cottage cheese is like shoe polish ... Well I gave you a recipe for my cheesecakes, tasty and trouble-free, and what?

Where?! I do not remember!

You see, my mom makes great cheesecakes. But she has everything by sight. And I have no flair for cheesecakes, even burst. I guess I didn't do them enough. We eat very little fried in oil. And the flair usually appears when I have cooked-re-cooked this dish a ton. This is what I have with bread dough. So I love precision to be pretty sure of the result. I decided to use catering - it didn't work out ...

And your question is not tasty / not tasty, but that you do not eat many foods or dishes. Your relationship with food has become complicated by force (diet, probably due to infection), and I've been a grudge since childhood!))) Therefore, casseroles / cabbage rolls / soups / cereals, etc. are my everything !!!)))

And I didn’t see that you designed the recipe I did it too - as soon as I talked to you in your blog Vermicelli took "Mivina", but not a bum-bag, but an ordinary one - which needs to be cooked, it is called an egg I like it in taste, and in shape from the entire assortment in the store, it seemed the most acceptable (but I never thought of spaghetti). The cottage cheese was homemade. I made 400 grams of marmashel, I also lied to sugar more, smeared it with homemade sour cream. Served with condensed milk (it was too lazy to boil custard cream). Personally, the fourth part itself was devoured while still hot, the rest was finished in a day.
Special thanks for the reminder about "with meat" - I did it once, but for some reason it disintegrates in the place of the meat layer - can there be any trick? : girl-th: Meat, by the way, is served with flour sauce like "béchamel", very tasty (all memories are from kindergarten, I went to the garrison, so they even gave us BANANAS then, and this was in the 70s)
