milk 100gr
eggs 21gr
sugar 10gr
butter (originally margarine - for lubricating the mold) 5gr

Cooking method

  • It is very convenient to recount for yourself - it is given per portion, although it is a bit too much for me. I triple everything by five.
  • This is a pasta casserole that we were fed with as children in kindergarten and school. Some here suffered from it)). It's done insanely simple. The taste is unpretentious (sweetish creamy pasta), but good quality. Probably, you can bake it from just leftover pasta or accidentally overcooked, although there will be no such milkiness in them, of course.
  • So, boil pasta in a mixture of water and milk without throwing it back in a colander. Over low heat until the liquid is absorbed. It is better to boil it a little, so that in the casserole they are then cut well and not dense. Do not make my mistake and do not take such "pipes" as mine this time))). Tortiglioni are used here, but they are clearly too large, which makes them difficult to stick together. You need less to lay denser and boil well. It's good if at the bottom you have a little liquid left when cooking. When you put it to cool, everything will be absorbed. Cool to 60-70 degrees (stir a couple of times while cooling), beat eggs with sugar in a separate bowl and mix with pasta. For lovers of sweeter sugar, you can sprinkle more. They are very mildly sweet. For me - the very thing, but for someone it will not be enough. Grease the form with butter, sprinkle with breadcrumbs, put the pasta and bake for about 30 minutes at 170 degrees. In later recipes, it is recommended to grease the top of the pasta with sour cream or some kind of oil before baking. So a crust will appear
  • Served with sour cream or butter. Mine are eaten with sour cream.
  • It is advisable to use it fresh and with sauce, because any pasta is good only fresh. So don't do a lot at once. Then it becomes completely dry. But you can also warm up if you suddenly have left. Put a portion in a plate, add a couple of tablespoons of milk, close with anything on top (you can put a plate in a bag) and in the microwave for a minute or a half. The milk is absorbed and the pasta in the steam bath softens and becomes nice / soft.
  • Well, the next "launch" the noodle maker with cottage cheese? Classics, by the way! Oh, I still have a debt for kurabi))) ...

It is very interesting that in the oldest recipe book (1955) 3 types of recipes are given in a tabular way: option 1 is the most "rich", option 3 is the "poorest". On the first, they did not save on milk, sugar, meat. fish, etc. Depending on ... I don’t know what, probably, the contingent of consumers, it was proposed to use different options. I can hardly imagine option number 3 in some Moscow ministerial kindergarten. And somewhere on the periphery it is quite possible and economical))).
