Basil ice cream with strawberry sauce

Ingredients

For ice cream:
milk 300 g
granulated sugar 130 g
corn starch 10 g
green basil leaves 15 g
cream 33-35% 350 g
For the sauce:
Strawberry 200 g
granulated sugar 70 g
strawberry liqueur (or cognac) 50 g (30 g)

Cooking method

  • Ice cream:
  • In a saucepan, combine milk and basil leaves. Put on fire. As soon as the milk boils - remove from heat, cover the saucepan with a lid and leave for 1.5-2 hours. Strain.
  • Dissolve starch in 50 grams of milk. Combine the rest of the milk with sugar, bring to a boil.
  • Pour the diluted starch in a thin stream. While stirring, let the milk boil again. Boil for 1-2 minutes so that the starch is brewed.
  • Tighten the container with a film so that it touches the surface of the jelly, condemn.
  • Beat the cream and combine with milk jelly.
  • Transfer the mixture to an ice cream maker and freeze.
  • Sauce:
  • Cut the strawberries into thin slices, add sugar and liqueur (cognac). Stir and leave for one and a half to two hours.
  • Set aside a small part of the berries, puree the rest of the berries with a blender.
  • To serve, fill the bottom of the bowl with sauce, add ice cream, garnish with the left slices of berries.

Marish, somewhere in Chadeyka I read that it works as a stabilizer: when the mixture is frozen, it prevents the formation of large ice crystals (the fat content here is still not too high, there are no yolks, cream with milk 1: 1), ice cream melts more slowly.
