Strawberry-rhubarb cold soup with rice

Ingredients

Rhubarb, chopped (young stems) 0.5 tbsp.
Fresh or frozen strawberries 1 tbsp.
Sweet apples 1 PC.
Sugar 3-4 tbsp. l.
Corn starch 1 tsp on horseback
Clove or cinnamon pinch
Rice 2 tbsp. l. on the plate
Water 3.5 tbsp.

Cooking method

  • - Peel the rhubarb, carefully remove the coarse fibers that are located along the stem and cut into cubes.
  • - Remove seeds from apples and cut into wedges.
  • - Boil apples and rhubarb in water with sugar with the addition of your favorite spices for sweet desserts.
  • - At the end of cooking, add some of the strawberries and cook with them for a few minutes.
  • - Strain the soup through a fine sieve.
  • - Cook jelly from the grated soup. Pour the starch with a small amount of cold water, stir until it dissolves, and, stirring, gradually pour into the soup. Bring soup to a boil and refrigerate.
  • - Rub the rest of the strawberries and put in the soup.
  • - Arrange the boiled and chilled rice on plates and pour over the soup. Garnish with mint and strawberries for a fresh taste.
  • Season with cream or non-acidic sour cream.

The dish is designed for

3-4 servings

Note

Summer soup. The sweetness needs to be adjusted to taste, it depends on how sweet the strawberries are. In fact, the main thing is to cook a delicious jelly from mashed apples, strawberries and rhubarb. Therefore, the ingredients can vary in both weight and quantity. You can do without apples.

You will need to plant a root for it to take root, and transfer it with a lump of earth. I'll see how you can do it!
