Ingredients

Thick yogurt without additives 900 g
Chicken broth (no fat) 3 l
Beet 600 g
Potatoes 600 g
Chicken breast (boiled) 500 g
Chicken egg 6 pcs
Fresh cucumber 250 g
Lemon juice taste
Green onion (without white part) 50 g
Dill 4 tbsp. l.
Salt, black pepper taste
Sour cream for serving

Cooking method

  • We have a fever .... the thermometer is almost forty ... then it's time to cook cold soups! Today I will introduce you to our favorite "Beetroot on yogurt". So:
  • Boil the chicken breast by filling it with 3.5 liters of water. Strain the broth and cool.
  • Boil potatoes, eggs and beets, cool and peel.
  • Cut chicken and potatoes into small pieces.
  • Beetroot on yogurt
  • Grate beets, fresh cucumbers and eggs on a coarse grater.
  • Beetroot on yogurt
  • Chop the onion and dill finely.
  • Beetroot on yogurt
  • Season the cooled broth with salt and pepper, add yogurt and stir well.
  • Beetroot on yogurt
  • Gradually add the chopped ingredients, stirring constantly. Add lemon juice (optional), if the soup is thick, then add cold boiled water. Season with salt and pepper if necessary. Put in the refrigerator for a couple of hours and let the beetroot cool and brew well.

  • Serve with sour cream, a slice of boiled egg and herbs. We love adding ice cubes.
