Lazy Stollen cakes with strawberries and poppy seed mousse

Ingredients

For the basics:
Light raisins 75 gr.
Dark raisins 75 gr.
Pine nuts 1 tbsp. l. with a slide
Orange juice and zest from 1 pc.
Any rum + honey 20 gr. + 1 tbsp. l.
Egg whites C-0 2 pcs.
Dried white bread 60 gr.
Flour / s 1.5 tbsp. l. with a slide
Spices: nutmeg, ground ginger, cinnamon pinch
Salt pinch
For poppy mousse:
cream from 23% fat 400 ml.
Orange ½ pcs.
Gelatin 15 gr.
Poppy filling (grated poppy seed + powdered sugar 50/50) 85 gr.
Boiling water 50 gr.
Boiled cold water 50 gr.

Cooking method

  • Preparing the base - summer lazy stollen:
  • We sort out all the raisins, rinse well. Scald it with boiling water. Put in a bowl, add the zest. Fill with orange juice and rum. Let it brew for at least 2 hours. It is possible for the night.
  • We turn on the oven to heat up to 200 degrees.
  • Make mashed potatoes from half of the raisins using a blender. Mix with the second half. Add flour, honey, bread crumbs, ground into crumbs. It is advisable to use bread not sweet yeast, but so as not to sour. Season with salt and spices. Mix thoroughly. Let's add pine nuts. Let's mix. Beat the egg whites until firm peaks and stir into the dough, gently kneading to one side.

  • Fill the form with low edges with a layer of 3-4 cm, without tamping.

  • Cover with foil.

  • We put in a baking sheet, fill with water so that it reaches the middle of the edges of the form.
  • We bake until tender - but do not bake, as the cake will cool in water.
  • We check the readiness with a toothpick.

  • Let it cool and take out the form. Using a glass, cut out the base for the cakes.
  • Cool the base.

  • Cooking poppy seed mousse:

  • Fill the poppy seed filling with boiling water. Mix quickly, cover with a lid or towel and set aside for 10 minutes.
  • Pour gelatin into cold water and leave to swell. Then we dissolve it in a water bath.
  • Remove the zest from the orange - rub it on a fine grater. Squeeze out the juice.
  • Beat the cream slowly until a fluffy mass is obtained. Add gelatin and mix gently.
  • Then add the orange. At the end add the poppy seeds and mix well.
  • Put the mousse into the prepared molds (I have plastic boxes from McDonald's sauce) and send them to the freezer.
  • We decorate and serve:
  • Cut the strawberries into thin petals and place them on the base.
  • We take out the molds from the refrigerator, put them in hot water for a couple of seconds and put them on a base with strawberry petals.
  • Decorate with mint leaves.
