Cold Estonian sweet soup with beer

Milk 400 ml
Light beer 200 ml
Egg 2 pcs.
Sugar 60 g
White bread 2 slices
Cinnamon 2 pinches

Cooking method

  • Estonian beer soup Õllesupp is a very original dish, a little unusual for us, but nevertheless it is a classic of Estonian cuisine. Children also eat it with pleasure, and this is quite acceptable, since there is no alcohol left in this soup after cooking. And it's easy to cook. Boil the milk and set aside. Eggs are beaten with sugar, beer is added to them, then, with stirring, this mixture is poured into hot milk and, also with constant stirring over low heat, is brought to thickening.
