Royal Apple Pie

Ingredients

Wheat flour 500 g
Sugar 550 g
Margarine 300 g
Egg 5 pieces.
Baking powder (baking powder) 1 pack
(18 g)
Hard apples (large) 10-12pcs.
Walnuts

Cooking method

  • Separate the whites from the yolks and refrigerate for now. Beat the yolks with 300 g of sugar, add soft margarine (cut into pieces).
  • Add flour, baking powder to flour.
  • Knead the dough and divide into larger and smaller portions. Put the smaller one in the freezer.
  • Take a mold about 25 cm by 40 cm with high sides, grease with sunflower oil.
  • Stretch most of the dough with wet hands over the entire shape and sides.
  • Peel and cut the apples, remove the core. Put half a nut into the core of the apple.
  • Put all the apples in the mold in a single order.
  • We take out the proteins and whisk with 250 g of sugar as in a meringue. Pour the meringue all over the top of the apples.
  • Now three dough from the freezer on a large grater all over the form on top of the meringue. We put the pie in a well-preheated oven on a small fire.
  • Bake until tender, about an hour. I have it in different ovens, always different baking times came out - from 45 minutes to 1.5 hours.

Everyone who tried it was satisfied. This recipe is from my childhood, proven. Mom always baked it. I bake often, it always works.

Baked at a temperature of 150 degrees for about an hour. And yet, so that the dough has time to freeze, it needs to be made a little in advance, about 1 hour before baking, then it will rub. By the way, you can put the main dough in the refrigerator, then it will be a little more elastic, and you can roll it out to the size of the baking sheet.
I sprinkled apples with cinnamon, there were no walnuts, but there were cashews, fried just fabulous came out in a pie, the children really liked

I am very glad that you liked it. And do not mess with the additions, everything is fine, everyone has their own imagination. When I'm lazy, I just cut the apples into pieces, sprinkle with sugar and then follow the recipe. I was very worried that no one would use the recipe, since I am a young baker. : (Although young, I've been in a bread maker, and I've been baking in the oven since I was 15. But I give recipes to the forum that are time-tested. Soon I will bake a cake similar in technology, only with coconut and poppy seeds (cream). I will post the recipe with photos.

Alexandra, I took only 300 gr. Sahara. 200 g in dough, 100 g in proteins. For me - quite enough. And the apples were Antonov's, sour.

Lately, I've seen a lot of different versions of this pie. Only the proportions, the name and the way of cutting apples change. I open the last grocery store - and there is also such a pie! That's it, it's time to bake ... the recipe, of course, changed ... I have a shape of 21 * 21 cm.

Recipe
2 eggs
100 gr plums. oil (room temp.)
150 g sugar (a lot !!! needs to be reduced)
150 gr flour
0.7 tsp baking powder
salt, vanilla sugar
apples ( I had 2 medium and 1 large, all different varieties)

Yolks + salt + vanilla sugar + 75g sugar (a bit too much, a couple of spoons are enough) - beat. add butter, beat. Sift flour with baking powder, mix. The dough is soft, mixed with the whisk of a mixer. Put a piece of dough (about a quarter) into the freezer. Line the form with paper (with sides), knead-stretch the dough with your fingers. Cut the apples into slices, spread over the dough in a thick layer. Beat the whites with 75 g of sugar (it would be necessary to reduce or add lemon ...), put on apples. Take a piece of dough from the freezer, grate on a coarse grater, spread over the proteins. Bake at 180 C for about 40 minutes.

I thought it would be a wet cake - in 30 minutes apple juice was boiling around the edges ... but no - it turned out very well. my form is not detachable, I pulled out the pie by the "ears" on the grate to cool - there are a couple of breaks. next time I'll let you cool down in the form or I'll take a detachable one.

and why didn't I bake such a cake before? the most delicate shortbread dough, a thick layer of apples, "meringues" and crumbly pieces of dough on top .... I will repeat, definitely ...

I found this recipe from my mother in Lviv, or rather
in Daria Zweig's book about baking, Lvov publishing house, the book is still Soviet. So she is the author of this recipe. Only she has lard instead of margarine. I don't like him. She uses lard in almost all recipes. Although they say that pastries on lard are better.

1. How do you put the apples in the mold: cut down or up or does it make no difference at all?
2. Have you tried making dough in a bread maker or always by hand?
3. Is it really the meringue in the finished cake, or did you just write it figuratively. And then in our family no one likes meringues ...
4. How do you determine the doneness of the cake?

Hey. :) You can. I answer in order:
1. Apples must be cut down
2. The dough was made only by hand
3. There is no dry meringue does not come out, there the mass will come out 50 to 50 meringue and cream
4. I put the oven on the smallest fire, preheat the oven well. And I look, when the top is browned, then with a toothpick I check the edge where the dough itself is.

I baked a cake last night, it turned out cool! The taste is very interesting, so delicate. Only, to be honest, I overcooked a little, but still very tasty! Next time you will need to get it out of the oven earlier, and I think you can really put less sugar!
I wanted to post a photo, but something didn't work out for me!
