Ingredients

Rice 1 tbsp. l.
Water ½ cup
Apricot puree ½ cup
Cream 10% 1 glass
Sugar or honey taste
Salt taste

Fresh apricots 1-2 pcs.

Cinnamon 1 pinch
Chopped pistachios 1 tsp

Cooking method

  • Selfish because only one a portion, only one... For a loved one.
  • Pour the washed rice with water, salt and simmer in a small saucepan with a lid. Pour the cream into the almost finished rice and bring the mixture to a boil. When the contents of the saucepan begin to rise with a cap, stirring continuously and slowly, pour in the apricot puree in a thin stream. The soup will thicken immediately. It should be sweetened to taste and set aside.
  • Pour the slightly cooled soup into a plate, put in it the halves of apricots, sprinkled with sugar and cinnamon, beautifully chopped pieces of cheese and garnish with pistachios. Can also be served chilled.
  • If you are preparing mashed potatoes yourself, you will need 200-250 g of apricots. They must be stewed with a small amount of water and ground with a blender.
  • By the way, do not boil soft-boiled rice, let it feel. This will enrich the texture of the soup.
  • A couple of mint leaves will have a beneficial effect on the perception of taste.

I will reveal a little secret (just don't tell anyone!)... I had frozen apricots - the remnants of last year's luxury. Therefore, only one. Therefore, I had to sprinkle with sugar.

You can relax and use puree for baby food. And not only apricot. It will go well with apple, pear, pumpkin, zucchini. Another jar is another soup.
