Ingredients

Bread rolls with flax seeds (fennel, cumin, coriander) 2 pcs.
Oat kvass or very thick yogurt
Boiled or baked beets 30 gr.
Boiled potatoes 30 gr.
Fresh cucumber 30 gr.
Pickled cucumber or olives 30 gr.
Salted (pickled) mushrooms 30 gr.
Sour apple 30 gr.
Black (white) boiled beans 30 gr.
Boiled dried mushrooms 30 gr.
Table mustard 2 tsp
Any greens
Salt to taste
Ground cinnamon (on the tip of a knife)
Ground cloves (on the tip of a knife)

Cooking method

  • About the components:

  • Carefully, using whatever you can find, remove the middle to resemble a plate.

  • Very plump buns with high sides behave very well. Preheat the oven to 230 degrees. Place the rolls and lids (inverted) on a baking sheet. Drizzle with olive oil. Add a little salt. Dry in the oven for about 5 minutes.
  • A little about beans. To boil the black beans until they are soft on the inside and firm in skin, soak them overnight and refrigerate. In the morning, without changing the water (without salt and spices), bring to an active boil (vigorous boil for 10 seconds) and reduce the heat as much as possible. Cook until tender. I cooked for 1 hour and 40 minutes. My beans are not very large. When ready, drain immediately and rinse gently with very cold water. Transfer to a plate and cover.
  • Prepare all vegetables for cutting. Cut all vegetables and dried mushrooms into small cubes. Everything except olives and salted mushrooms - we will decorate them.

  • Prepare a dressing - grind mustard with ground cinnamon and cloves Add a little greens chopped into the dust. Mix. Immediately running forward - this is SOMETHING !!! The combination with yogurt or kvass as a base for okroshka is simply awesome! Back ...
  • Place the bun on a lid or small saucer. Put a spoonful of yogurt on the bottom of the bun. Salt a little with black salt. Then (in segments for beauty - interspersed for gray everyday life) lay out all the vegetables. In the middle, again a spoonful of yogurt and, as the apogee, a drop of dressing (then decide to taste - we put spoons). Decorate with olives and whole mushrooms, sprigs of herbs, a feather of green onions.
  • Cover with a crispy lid on top. And enjoy the ocean of flavors and bouquet of aftertastes! The cap is then perfectly eaten with yogurt, dressing or just black salt!

The kvass version was originally conceived. Oat kvass is your own. Recipe for a Lenten table for the approaching Peter Lent (except for eating on Monday, Wednesday and Friday, except for the day of the Transfiguration of the Lord). But the bun refused to hold the kvass. Thinking of a recipe for buns, I wanted an airy porous dough, but it quickly softens. But it is very tasty. Not bland. Therefore, the version with kvass was prepared in an ordinary plate and, believe me, deserves attention. But… unfortunately, the photo was not successful. And the plate is empty ... But I'll repeat it!

Unusual! Very tasty! This is the most delicious okroshka that I have tried. Thanks to the competition. Before, I didn't even pay attention to okroshka. And now this is my favorite food!
