Cooking method

  • Hello everyone! So the time has come for summer cottage work and rest, they plant somewhere else and we can already collect. The blessings of the sun are enough and the first harvest has already ripened. Vegetables from the garden, all natural grown under the Crimean sun. And the set of vegetables ripened suitable. It's time to cook a fragrant spring borscht. We light a fire while the coals are forming, we prepare our vegetables. My beets and potatoes. Wrap the potatoes in foil. The skin of young potatoes is tender and it bakes quickly, we put the beets on the coals as they are. Bake for about 20-25 minutes. Make sure that there is no great heat, otherwise it will burn. We take the vegetables out of the ash, let them cool a little, peel them. Cut three beets on a grater potatoes into cubes. Now we will make the frying, it is better to do it over low heat. Fry chopped onions and carrots in vegetable oil. Chop bell peppers and tomatoes. Add to carrots and onions, fry again. And add tomato paste, fry. We remove from the fire. We put the cauldron on the fire, you can take any pan you like. Pour water about 3 liters, let it boil. (Since I use a "miracle stove" for cooking, and its area does not allow cooking two dishes at the same time, I do everything in stages) As soon as the water in the cauldron boils, add a chopped celery stalk, garlic greens. Cut the cabbage and beet tops into strips. We throw it into boiling water. Cook for 5-7 minutes. Add chopped potatoes, vegetable frying and grated baked beets to the pan. Salt, add bay leaves, black pepper. And whoever likes it sharper - a pod of hot pepper. Cook for 10 minutes over low heat. Add chopped celery and parsley with garlic five minutes before cooking. Close the lid and let it brew for 20 minutes. You can serve!
  • P.S I think that you have already understood that our borschik is absolutely lean, but if you want, you can add a can of any stew for richness to it.
  • And note that I did not add sugar or vinegar to the borscht! Regulated acidity with beets and tomatoes. Native beets from the garden are very sweet! And the tomatoes from the greenhouse are fragrant and sour.
