Peeled rhubarb 300 g
Orange zest 0.5 pcs.
Granulated sugar 100 - 120 g
Cinnamon 0.5 tsp or 1 stick
Carnation 2 pcs.
Water 1.25 l
For brewing jelly:
The water is cold 125 ml
Starch 3 tbsp. l.

Cooking method

  • My pets do not like pure rhubarb. It seemed trivial to just cook jelly from rhubarb and pumpkin, I wanted to get a useful and unusual dessert at the exit, which would be dishonorable to serve at the festive table. I had to dream up.
  • Preparation
  • - Peel the pumpkin, free the stalks of the rhubarb from coarse fibers, cut into small pieces.
  • - Pour 5 glasses of water into a saucepan, add sugar (first 100 g), lemon or orange zest, removed in the form of a thin ribbon, add a cinnamon stick or cinnamon powder, boil for a few minutes over low heat, then lower the pumpkin pieces, cook 5 minutes, then add rhubarb (it cooks faster) and cook under a lid over low heat for 5 minutes until the pumpkin is completely soft. A couple of cloves just asked for this ensemble, I had to add and boil them along with zest and vanilla.

  • - Choose pumpkin and rhubarb in a separate cup and use a blender to puree them. If necessary, filter the puree through a sieve. Put it back in the pot and bring to a boil. Trying for sugar, I had to add a tablespoon of sugar.
  • - 3 tbsp. l. mix starch (a little more corn) with 125 ml of cold water and in a thin stream, stirring constantly, pour into a saucepan with mashed pumpkin and rhubarb. Bring to the first signs of boiling, stirring well, turn off and cover with a lid.

  • Cool and serve in glasses, decorating as you wish. We liked the cap of fresh, whipped sugar-free cream that can be sprinkled with cinnamon.
  • It turned out to be a wonderful compromise - the pronounced tastes of pumpkin and rhubarb smoothed out, combined, and the zest, notes of cinnamon and cloves gave a kind of dessert status to the jelly.

Note

Dessert went off with a bang, I had to cook again immediately. The second portion was not even allowed to cool! Tasty, with cream in general, extraordinary! For a long time I was not so pleased with the result.
You can simply add cream when serving, even not very fatty, into the glass, just a couple of spoons.
Using a soup cooker will significantly speed up the process.
The amount of sugar directly depends on the sweetness of the pumpkin.
