Ingredients

For thin pancakes:
Milk 500 ml
Sugar 5 tbsp. l.
Cocoa 1 tbsp. l. with a slide
Salt 1/2 tsp
Flour / s 150 gr.
Potato starch 1 tbsp. l.
For filling pancakes:
Berries of different colors: gooseberries, white currants, cherries 1/2 cup each berry
Sugar 6 tsp with a slide
Gelatin 4-4.5 tsp (depending on strength - a lot is not good either)
For milk jelly:
Milk 900 ml.
Sugar 10 tsp
Vanillin
Gelatin 25 gr. + 1.5 tsp.

Cooking method

  • Making thin pancakes:
  • You can bake thin pancakes according to any of your usual recipes. The main thing is that they are thin and without holes. I made the dough from the above ingredients using a food processor. She mixed everything and baked pancakes in a small frying pan. It is important to choose a pan that is the size of the pan where you will be making the jelly. Otherwise, the pancakes will have to be cut off.

  • Preparation of milk jelly:
  • Pour gelatin with lukewarm milk and let it swell. Then over medium heat, stirring constantly and, without allowing it to boil, add sugar, vanillin, stir the gelatin until dissolved. Pour some of the milk into the jelly pan through a sieve to prevent even a small particle of gelatin from reaching the bottom for the base. Put in the refrigerator to set.
  • Making pancake jelly:
  • Berries, and they must be of contrasting colors. Premature advice: do not replace cherries !!!! - its taste and color is the most awesome !!! The rest of the berries are optional. So they need to be sorted out, washed and dried. After all, we will not subject them to heat treatment - we save vitamins! WHY - all separately, in different dishes!
  • Berries can be:
  • or grind with a blender in puree;
  • or (as I did due to the failure of the hand blender) pushed with a pusher. I didn't remove the shmykh, but how does it interfere? But everything is useful in it, but it's for our taste. You can grind through a sieve.
  • We do this together with sugar (1/3 of the norm in each glass). Alcohol can be added to the berries if the dessert is intended for adults. Then add gelatin to the puree (1/3 of the norm in each puree). We put a container with berry puree in a water bath and, stirring constantly, wait until the gelatin dissolves.
  • Preparing a surprise:
  • We put the pancakes, and we need three of them, on different plates. You can, of course, apply more, but I wanted to show you this dessert in this way. Although there were so many ideas that I almost managed to stop myself. We eat the rest of the pancakes - it's delicious! Then quickly, until the jelly thickens, we spread each pancake with jelly, raking the berries to the edge, which will roll up. We spread and soak well. Then let it freeze a little - a little bit and fold. Grease the jelly puree on top again.

  • Cooking jelly with a surprise:
  • Get the form with a frozen base. Trim the edges of the pancakes. Fit into shape

  • and pour (through a sieve) the rest of the milk so that the pancakes are completely drowned. Chill the dish.
  • Serve sliced ​​jelly, sprinkle with powdered sugar, garnish with berries and a chocolate rice pad.
