Dandelion honey (pressure cooker Polaris 0305)

Ingredients

Dandelion flowers 600 pcs
Sugar 1.5KG
Water 750 ml
Lemon to-that 1.5 tbsp. l.

Cooking method

  • There are many recipes and variations on this theme. I decided to write how I do in a pressure cooker. Since the first time I was a little confused in the modes, it boiled very much for me, then it did not boil at all ...
  • Collected dandelions, only heads. Collected in the morning, opened, but so far brought home - the buds are closed. But this did not affect the quality of honey.
  • (Our saucepan is full - multiply everything by 2. That is, 1200 dandelion flowers).
  • I washed them well. I put it in a saucepan and filled it with water.
  • Dandelion honey (pressure cooker Polaris 0305)
  • FRY mode - pressure 3. When the dandelions have boiled, switched to pressure 1. Cooked the flowers for 20 minutes. I covered it with a lid, the valve is open. Just not to evaporate.
  • After that, she squeezed the infusion well through cheesecloth or a sieve.
  • The broth is black.
  • Dandelion honey (pressure cooker Polaris 0305)
  • I pour the infusion back into the pan, add sugar.
  • Frying mode - Pressure 3. After the broth with sugar boils, cancel the Frying mode and turn on the HEATING mode! In this mode, honey boils quietly for another 20 minutes. If it boils a lot, turn on the heating instead of heating. And watch out for honey. If suddenly the honey starts to rise - just raise the saucepan for 2 seconds. and omit.
  • If you leave the honey in the pressure cooker overnight, and the next day boil it again for 10-15 minutes, the honey color will become even more beautiful. It will turn out to be very transparent right up to \ "fragility \". Beautiful cognac shade.
  • 3 minutes before the end of cooking, add citric acid. And immediately honey becomes honey. Fragrant and delicious.
  • Dandelion honey (pressure cooker Polaris 0305)
  • Can be immediately poured into sterilized jars and rolled up for the winter. You can simply refrigerate and eat with tea.
  • Dandelion honey (pressure cooker Polaris 0305)
  • Bon Appetit.

The dish is designed for

1.5 liters of honey

Time for preparing:

40 minutes

Cooking program:

Frying + Reheating

Note

I cooked from 1200 dandelions. Only the broth was made 600 pieces twice. And then she combined both broths, added 3 kg of sugar and boiled honey at a time. I rolled up 5 half-liter jars for the winter and left the jar to eat now.

inka_kot, I'm amazed!

inka_kot, Oh, how lovely! I remember that I also cooked a long time ago ... and we ate it as a medicine (for the liver)!
inka_kot
Galleon-6, no. I give you 500% that they are not bitter. Do not even bother and do not listen to those who say that you only need yellow petals. That's bullshit.
According to this recipe, my mother made me honey as a child. I don’t need another one for any millions. I didn’t eat honey tastier. It is in this recipe that he has a good thick consistency, namely honey. And due to the fact that you put a lot of citric acid, it becomes not cloying.
Girls, I collected 1200 dandelions in 1.2 hours.
It only sounds so threatening, but it breaks easily and quickly.
You can make 400 dandelions: 0.5 water, 1 kg sugar and 1 tbsp. a spoonful of citric acid. Get about 1 liter of honey. But it won't be enough for you, that's for sure!

Where do you store it?

Where do you store it?
Just in the closet in the apartment. In the same place as the rest of the conservation.
When we lived in our house, they kept it in the cellar.
It is not sugar-coated. Or we don't have time to get sugar. )))))

Girls, just pick the dandelions IN GLOVES !!! Expensive manicure and all that .... and so the pens are clean and there is honey for tea.

Oooooooo .... 1200 ... What a terrible digital!
I have never tried this before ...
But I probably will never decide on it ...
Or maybe ... who knows.
Thanks for the recipe!

If you are passing through us in Ukraine, namely in Dnepropetrovsk - let me know! I will give you a jar of honey to taste, and you will cook it regularly! A day after you made it - it becomes so TASTY! I can't even describe to you how delicious and aromatic it is. (although we start to eat it as soon as I turn off the pressure cooker, and my husband cannot be pulled by the ears at all)
Tashenka
Dandelion Honey ... It's always delicious (and healthy). And the flowers are really collected very quickly. Only now you need to go out of town to get them ... Thanks for the modified recipe.
Natusichka
And if I don't have a pressure cooker ... and I really want it ... how to cook it? As long as there are dandelions.
Natalie@
Inessa, be stunned! Thanks for the recipe! Well, you and bother!
I have a question: does dandelion honey look like bee honey? I don’t like bees. And how long did you store it for approximately how long it didn’t have time to become sugar (if you eat honey, then the current one)
inka_kot
NatusichkaDo everything according to the recipe, just put the dandelions on the stove and cook for 20 minutes. Squeeze the flowers, and put the broth on the stove again, add sugar and from the moment of boiling, cook on SLOW heat for 20 minutes. Add citric acid 3-5 minutes before the end of cooking.
Previously, we didn't have any pressure cookers or multicooker at all. Mom always cooked on the stove, and I collected dandelions for her. It was a long time ago ... eh ..)

Natalie@, no, not like. I'm not really a bee either. This honey has an unreal aroma and taste. I don’t know what it looks like. I haven't tasted anything tastier. Well, until the middle of winter it definitely stood - did not sugar at all, then we ate it.

Tashenka, right. It is necessary to pick flowers in the morning and outside the city. So that there are no cars and urban dirt. That is why I brought him from an "ecologically clean" area of our region by the standards of Dnepropetrovsk, the buds closed. By the way, I just collected it in two bags of 600 pieces, then I tied it well and took it to me. So do not be afraid to leave the city for them, those who live in the metropolis.

Inessa, does this honey have any useful properties?

HONEY (JAM, SYRUP) FROM Dandelion

Dandelion honey (or jam) is delicious. They are treated for colds and infectious diseases. In addition, this jam increases immunity, therefore it is especially appreciated during flu epidemics. Many recipes can include young needles, licorice, cherry leaves, mint, lemon balm and other useful herbs. Another "specificity" of medicinal honey is the improvement of the condition with urolithiasis, hepatitis and cholecystitis. Dandelion honey speeds up the recovery of the liver and gallbladder after surgery. Many people say that dandelion saves during asthma attacks and helps with bronchitis. It is also used for cardiovascular diseases.

Wow, how many properties Left to find a "clearing" with ecological dandelions

I don’t know, I didn’t weigh. ))))))))))))) By the way, a good idea. If I get out on the weekend to the dacha for dandelions, I'll weigh it. Although on the other side there are small dandelions, and there are large ones ... Probably such an idea will not work.
Well + - 10, 20 dandelions will not play a role. So start again at 935.)))

thanks for the recipe! always dreamed of trying and cooking - definitely bookmark
Venera007
Inessa, and at what stage of cooking does the liquid turn from dark to amber-golden?
There is no pressure cooker, there is an ordinary cartoon, I want to try it, I hope, we will have time to collect flowers, because dandelions fade so quickly ...
inka_kot
Venera007, at the time of adding citric acid. Just like you put lemon in tea and tea becomes light. Just put it at the very end, about 3 minutes before the end of boiling honey.
inka_kot
I collected and WEIGHED the dandelions today!
600 pieces is 350-400 grams.
She folded as usual in two bags of 600 pieces. One contains exactly 350 gr. In the second, about 400 gr. )))
Venera007
inka_kot, you feel good, but here it rains, and it's cold. And when it gets warmer and the dandelions bloom already (((

We also had this. And after the rains, their second life began. In general, a sea of flowers crawled out.
And yesterday the last ones were collected. Everything is already, mostly white fluffy heads are ... rolled up with my husband for the winter 11 half-liter cans. Now we will be with sweets in the winter.
Venera007
Inessa, you reassured me, hope is not lost yet, we will wait for warming)) I really want this honey))
Natusichka
And I was late this year with the jam ... we ran out of dandelions ...
inka_kot
Natusichka, don't forget next year! I remember. )))))
Natusichka
Thank you!!!!!A true friend!
Elya_lug
Natusichka, under my yard, dandelions bloom all summer, maybe not in such volumes. I also boiled some honey. And now I will pick the flowers and put them in the freezer until the quantity I need is typed.
inka_kot
Elya_lugDo you cook from frozen? I have never heard or tried ... Share ...
Elya_lug
inka_kot, I didn't cook it from frozen ones, only from ordinary ones, but I want to try. If the berries are freezing, then why not freeze the dandelions.
inka_kot
Elya_lug, please tell us how to get it.
Elya_lug
inka_kot, well.
Natusichka
Elya, cool! And in our country, they all died out ... that is, they turned into fluffy balls
Elya_lug
Natusichka, new ones should come out
Natusichka
Then I'm waiting ...
inka_kot
You know, I just came to the conclusion that it is better to leave honey overnight! And the next day, boil it again for 10-15 minutes and roll it over the banks. If you do this, then the color of honey becomes already so transparent that it is already "fragile". And it's such a dark cognac in a can. And when you take it on a spoon, it is light amber.

They just closed honey to friends. It will cool down - I'll try to photograph the jar tomorrow. Very beautiful pure color ... I did not even expect that it will be.
win-tat
Inessa, I'm brewing honey now, tell me please, if you leave it for the second cooking until tomorrow, don't you need to add lemon today? Add tomorrow after the second boil?

Added today and left until tomorrow to boil again. And it really tastes like the lemons are too much, sour ..
irisska
I cooked honey! It certainly doesn't look like honey. Maybe a lot of lemons for my taste. It tastes exactly like the rosehip syrup from childhood. I will definitely do more, just put less acid. Thanks for the recipe!
inka_kot
irisska, wait .... let it stand for a day or two, you won't feel the acid.
Put it in the refrigerator.

win-tat, did the right thing that added today. Tomorrow just boil for another 10-15 minutes. You won't feel acid in a day or two !!! Don't subtract. My first day is generally sourish. And I try every other day - I would still put in the lemon.
win-tat
Inessa, thanks, I'll post the pictures tomorrow.

Inessa, thank you, I'll post the pictures tomorrow.
We wait!!! Put it in the refrigerator, the one that you leave to eat (and the one that can be preserved immediately in the cellar or pantry).

Girls, the longer the honey stands, the better it gets.
Venera007
inka_kot, but my liquid turned out completely, I don't understand what's the matter
My husband liked it, he will gobble it up, but I’m even wrong .. I’ll try it after a few days.
inka_kot
Girls, before use we put in the refrigerator at least for the night! If with an open lid, then it is generally ideal.

And so it turns out to be liquid. It is like early-early honey, even a little thinner.
The portion you eat - put in the refrigerator. It thickens even more in the cold.
And it is possible in tea instead of sugar, generally gorgeous and aromatic.
The other day I baked "Mankin Kranz" according to Elena Tim's recipe. Instead of water and sugar, I filled the carrots with this honey - it turned out just delicious.

Venera007, is it liquid after cooling? Try to boil it again. Pour into jars. And the one you will eat - in the refrigerator for the night.
Venera007
inka_kot, I've already poured it into the jars, I don't want to boil anymore, so we'll eat a thin syrup. Next year I will try to cook it again. Now it is damp again, we cannot collect dandelions ...

I report that yesterday morning I was lucky with the weather, and I went after the dandelions, fortunately, they are dark near the bay of our Finnish, and I have 5 minutes to walk to the bay. The number 600 was frightening to the point of impossibility, so I took 1 packet, without even thinking about the double rate. But .. girls, you can't even imagine how fast it is to tear the "heads" of dandelions. In total, 1200 narwhal heads in 1 hour. Weighed 1200 flowers - 1550 gr.
