Broccoli noodles with pine nuts, garlic and cheese

Ingredients

broccoli 1-2 pcs
garlic 1 PC
red pepper flakes
pine nuts
olive oil
salt
lemon juice
grated cheese

Cooking method

  • Cut off broccoli inflorescences as short as possible and set aside.
  • The remaining stump, and it is quite large (before I would have just thrown it away), cut into a Spironat grater. Spaghetti, of course, will not work out of it, but noodles are fine.

  • Add olive oil, broccoli inflorescences, stump noodles, red pepper flakes to a large preheated pan, season with salt and pepper. Cover and cook for 5-7 minutes, stirring occasionally.
  • After a while, add garlic and lemon juice, and fry for a few more minutes until fully cooked.
  • While the broccoli is cooking, fry the pine nuts separately over medium heat.
  • Serve with toasted nuts and grated cheese.

And I sooooo love! And the core of the stalk, which remains uncut, and is very tasty raw, is similar to the cabbage stalk, but more tender and tastier
It's all in the case, it turned out waste-free production

And my hands will never reach the cabbage stumps. I think everything, right now .... and it did not work out
Galinka, a good idea with stumps

Another idea - the same can be done with cauliflower, when preparing salad, gratin, or soup - with a coarse grater, or cut into strips
Gala
Tatyana, I looked at the cauliflower stump, but there is practically none, it is very small. Broccoli has a huge, very large waste if you throw it away, and most importantly, it's a pity, it turns out to be very tasty.

Well, yes - that's why they are reluctant to buy such cabbage, with a long stump, people just don't know that it can also be consumed
