Whipped cake in a bread maker (option 3)

Ingredients

Sugar 4 tbsp. l.
Vanilla sugar 1 pack (30gr)
Salt 1 tsp
Egg (medium) 3 pcs
Butter 165 g
Milk (2.5%) 100 ml
Flour 420 g
Dry yeast 2.5 tsp
Candied fruits, nuts, raisins ~ 120gr
Glaze
Milk (2.5%) 1 tbsp. l.
Sugar or powdered sugar ~ 115 g

Cooking method

  • We lay it like on ordinary bread, first everything is liquid:
  • - dissolve the oil and pour it on a spatula
  • - we heat milk to body temperature (~ 30 seconds in the microwave)
  • - pour in eggs, piercing the yolk (it is better to knead)
  • - sift flour
  • - in the corners: salt \ sugar \ vanilla sugar
  • - yeast in a depression in the middle
  • We set the parameters:
  • - bread: "Sweet" (who has - "Sweet with raisins", who does not have neither the other - "Basic", but even on the "Light" crust - the crust will be dark)
  • - weight: 900gr \ 1kl \ XL
  • - crust: "Light"
  • In the process of mixing, we make sure that the flour and lumps do not remain on the walls, it is such a baking. While the mixing process is in progress, we are preparing the "filling":
  • - raisins, about 60 gr, rinse, soak in boiling water for 5 minutes, dry on a towel or napkin
  • - nuts: about 40 gr, to your taste: walnuts (crush), hazelnuts (lightly grind or crush), peanuts (fried or dry in the microwave for 2-3 minutes and exfoliate, grind lightly)
  • - candied fruits: about 50 g, usually on sale cubes 0.5 * 0.5 * 0.5 cm, I cut almost into shavings
  • After the signal, put raisins, nuts, candied fruits (to improve their "spread" in the dough, I slightly help with a spatula)
  • At the end of baking, we take out the bucket and let it stand for 5-7 minutes, then we carefully take out the cake (I hurried and my crust peeled off on one side)
  • Let the cake stand for another 10 minutes, during this time we prepare the icing.
  • Glaze: I was sorry to harass one more egg and I was too lazy, and made a milk frosting (the taste is so-so, a lot of sugar and small portions are inconvenient to cook, this dosage is for 1 cake in a butt): grind the sugar. We warm 1 tbsp. l. milk (~ 20 ml) in the microwave for 40 seconds and pour into the powder, beat with a whisk of a mixer at low speed until glossy (the mixture is viscous, like molasses). Spread on a warm cake (even after 12 hours, this icing is soft, but very sweet). Sprinkle with decorations.
  • Bon Appetit. I baked it the day before, in the morning I managed to take one photo (attached), the crumb is slightly yellowish. The wife resisted the cake to treat colleagues at work. I'm baking a new one - if I'm good, I'll post it.

Taking into account the morning test of the 4th - I liked the 2nd and 3rd options, in the evening I will post the 4th.
I didn’t try the first one, but according to my mother’s reviews it’s very tasty, I cannot specify
The second has a very rich dough, as if it was made in a village oven (I liked it more)
The third has a more fluffy crumb, the nuts give a pleasant aftertaste (the wife liked it more)
The fourth has a very airy, a little bit fresh (I did it without vanillin, with lemon zest - I think that's the point)
