Lean borsch

Ingredients

Beet 200 g
Carrot 100 g
Fresh cabbage 200 g
Potatoes 100 g
Bulgur 15 g
Mash 15 g
Lentils Beluga 15 g
Split green peas 15 g
Bulb onions 50 g
Tomato paste 3 tsp
Bay leaf 3 pcs
Lemon 1 slice
Sugar 1 tbsp. l.
Salt, spices taste

Cooking method

  • Cut the beets into cubes, put in a saucepan, sprinkle with sugar, sprinkle with lemon juice,
  • stir, add a little hot water and put to simmer.
  • Cut the carrots into cubes, add cabbage into strips to the beets.
  • Add tomato paste. Simmer for 15-20 minutes.
  • Cut the potatoes into cubes / strips. Rinse the cereals. Add to the pan. Bring the volume to 1.5 liters with boiling water.
  • Put the bay leaf. Cook for 35-40 minutes. 10 minutes before readiness add salt, spices and onions (fried if desired)

A beautiful vegetable soup, but the abundance of legumes in it is somehow unusual. If you exclude them, you get a normal borscht. and not some kind of perversion!
