Grated loaf 2 slices without crust
Chuka seaweed 150 g
A tomato 1-2 pcs.
Arugula or small salad 4 handfuls
Mayonnaise 4 tbsp. l.
FOR BURGER WITH SMOKED (SALTED) RED FISH:
Red salted or smoked fish 4 slices
Cucumber 1 PC. average
Cilantro and dill small bundle
A tomato 1 PC. for decoration
Avocado 1 PC. for decoration
Mayonnaise 4 tbsp. l.
Lemon juice for avocado Little

Cooking method

  • Although the buns are good in themselves, they were conceived specifically for a fish burger. Of course, I don't want to say anything bad about McDonald's burgers, but homemade food is still tastier and, of course, healthier. And even though I came up with the filling myself, I still had to look at American sites to see how they cook homemade fish cakes for burgers there. I have not discovered America, but some of the nuances have become clear.
  • I offer two recipes for a fish burger.
  • Option one
  • Let's prepare the first burger with a chopped red fish cutlet. We really liked this option, as the cutlet itself turned out to be simply delicious. And the addition of chuk algae was very harmoniously complemented and emphasized the "sea" origin of the recipe.
  • We make delicious chopped fish cutlet, which is self-sufficient in itself
  • - Take, if possible, a lean fillet of red fish. I had chum fillet. Wash the fillet, squeeze a little and dry.
  • - Cut the onion into very thin slices on a Berner or Gigant grater. It is important to cut as thin as possible! It is desirable to take onions sweet and juicy.
  • - We take greens, fish, a piece of chili, onions and start chopping everything together on a board in all directions until the fish is chopped to a loose mass, but not to the state of the minced meat we are used to from a meat grinder.

  • - Sprinkle the whole mixture with lemon juice, pepper, three a little lemon zest (I like a lot). On top of the minced meat, three dried white bun or loaf. The amount of bread should be very small! (Do not use breadcrumbs!)
  • Add a small egg, preferably 2 quail eggs. Salt and mix well, taste for salt and send the minced meat to the refrigerator for cooling. There the minced meat will thicken, and it will be easy to form burgers from it, that is, in our opinion, cutlets.

  • - We take out the minced meat, form the cutlets according to the size of the burger bun, fry on each side for a maximum of 2 minutes. The cutlets should be moist and juicy. Fish cakes without breading are generally easy to dry out!

  • Putting together a burger
  • Cooking mayonnaise.
  • We add a little lemon juice, a little sugar and lemon zest to our usual domestic or homemade mayonnaise.
  • - Cut the burger bun in half. We spread the chuk algae well squeezed from the marinade on it. Slightly grease with mayonnaise.
  • - We spread our cutlet on the seaweed. Put thin tomato slices on top of the cutlets. Lubricate with mayonnaise and put rucola or green salad on top.Press with the top of the bun and serve until the cutlet is warm. Delicious and cold.
  • Option two, faster.
  • - If you have hot or cold smoked red fish or just salted red fish, you can also make an excellent fish burger. Smoked salmon or chum salmon are preferable though.
  • We use mayonnaise as in the first version.
  • - Put a cucumber very thinly sliced ​​into long slices on the bottom bun. So thin that they don't break across when bent.
  • Put a small salad or arugula on a cucumber and grease with mayonnaise. Put fish slices on top, grease with mayonnaise and sprinkle with herbs. Put tomato slices, you can pepper them. On top of greens and tomatoes, spread, if any, avocado slices. It is better to sprinkle the avocado with lemon juice beforehand so that the pulp does not darken.
  • Cover with the top half of the bun and enjoy a real wholesome homemade burger.
  • I assure you that after such a burger, you will be drawn to visit McDonald's only in case of extreme need, when there will be no alternative to a snack.
  • I made two fillings in one burger, very convenient. Burger with cutlet on one side, vegetarian on the other.

I highly recommend the fishcake from this recipe.
Cutlets were fried in the Princess pizza maker on non-stick paper in a preheated oven. She formed cutlets directly on paper.
I saw recommendations to add mustard to minced fish.
