Lean dough in Panasinic bread maker (universal)

Ingredients

Instant yeast 1.5 tsp.
Wheat flour 450 g (or 3 two hundred and fifty grams s glasses)
Salt 0.5 tsp
Sugar 80 g (or 3 tbsp. L.)
Vegetable oil 60 g (or 6 tbsp. L.)
Water 250 ml

Cooking method

  • A family recipe, tried and tested hundreds of times, adapted for the Panasinic SD-2500 bread maker.
  • Ingredient Notes:
  • 1. Instant yeast. I am using pakmaya. It is possible that more or less others will be needed. Let's say SAF - you definitely need more or give more time to rise the dough.
  • 2. Wheat flour any, except for whole grain.
  • 3. The amount of salt can be increased to 1 tsp.
  • 4. The amount of sugar can be reduced to 1 tbsp. l.
  • 5 . Any vegetable oil. I did it with sunflower, olive, soy. The denser the butter, the thicker the dough. The most luxurious is obtained with soybean oil.
  • Then we follow the instructions for the bread maker.
  • We put the ingredients in the specified order, select the Diet menu item and press the START button. We are waiting for the end of the program.
  • Ideally, the dough should look like this.
  • If the dough has not risen enough in the allotted time (this may depend on various reasons: weak yeast, too cool in the room, etc.), then you can leave the dough in the bread maker for another 30 minutes or (if it is warm in the room) put it on the table, dusty with flour, cover with cling film and also leave for 30 minutes.
  • What can be prepared from this dough?
  • For example, apple cinnamon pie.
  • Lean dough in Panasinic bread maker (universal)
  • Rolls, buns, pies and pies with any filling.
  • If you add raisins to the dough (Diet program with raisins), then you can bake a cake for those who cannot eat eggs and milk. The dough is cooked separately, and then the baking mode is turned on for 50 minutes.

The dish is designed for

800 g

Time for preparing:

2 hours 20 minutes - 2 hours 50 minutes

The baked goods are very tender, no worse than baked goods. You will not regret.
yudinel
aunt, and the pastries are also fluffy the next day?
Thanks for the recipe! : rose: I'll try!
aunt
yudinel, yes, this is the most amazing thing, without eggs and milk, like baking.

And what kind of yeast is this?
ivolga
The recipe says "Vegetable oil 60 g (or 6 tbsp. L.)".
And I found that 1 tablespoon of vegetable oil = 17 grams.
That is, 6 tbsp. spoons = 102 grams.
How is it correct?

How is it correct?

Interest Ask. As in 6 tbsp. spoons turned out 60 g of butter?
I did this: I put a bucket of HP on an electronic scale, dropped the weight to 0 and began to lay out the products in the order indicated in the recipe, with glasses and spoons. I remembered the resulting weight in grams. After each product I set 0.
The simplest vegetable oil from the store weighs 60 g in 6 spoons. I think soybean oil will be heavier. The tablespoon is the most common one that was at hand.

Everyone can outweigh for themselves, or not. When I'm too lazy to get the scales, I do not in grams, but in volumes, as in the original recipe. Yeast is mostly instant, so I measure it with a measuring spoon from a bread machine. If someone is interested, I'll tell you how to make this dough in a bread maker with fresh yeast.)))

Original recipe:
20 g fresh yeast
3 cups flour
3 tbsp. tablespoons of sugar
6 tbsp. tablespoons of vegetable oil
0.5 teaspoon of salt.
1 glass of water
1 glass = 250 ml

So in this recipe, it is not the weight of the oil that is important, but the volume. We can say that I indicated the grams approximately.Write, if not difficult, how much weight 6 tablespoons of oil did you get and I will correct the recipe "from 60 to ... g."

I mean, what are instant? It's fast acting.
Or what is Pakmaya? This is the yeast that I use.

Lenochka, thanks for the recipe! fresh fruit will go, I will definitely try it.
I usually use fresh yeast, should it be crumbled like that when laying in HP or is it better to activate it in a glass?
and after shaping the cake, should it be allowed to move a little or directly into the oven for baking?

Any dough tastes better with fresh yeast. Never tried to chop, although I read it here on the forum.
If I do it with fresh yeast, I collect the flour in a bucket towards the middle to make a partition between the two holes. I put salt, sugar, butter in one hole, and dough in another.

Dough from the volume of products for dough:
I put the yeast in a separate container, sprinkle 1 teaspoon of sugar on top and wait until the yeast and sugar melt. It's 2-5 minutes.
I add a tablespoon of flour and a little water to a liquid gruel. I'm waiting for the mass to double. It's about 10 minutes.
I mix with the rest of the water and pour it into the dough hole. I mix a little flour from the bottom into the dough.
I turn on the Dough Diet mode 14.
If the yeast is very fresh, then you can first turn on the mode and immediately start making dough - there will be enough time. But if I'm not sure about the yeast, then I don't risk it.

There is no problem in Panasonic, there is a delayed start, so there is enough time for dough.

According to the technology, after cutting, yeast dough products are always given time to rise.

I sometimes do it faster: I put a baking sheet in a cold oven, turn it on. While the oven is heating up, the dough is fine. But in this case, the finished products are less lush.

Can you tell me how much more SAF?
aunt
echeva, I have used SAF only once: 1 + 1/2 teaspoon. I mean a measuring spoon from Panasonic.
I just waited a little longer for the dough to rise. If you want to quickly, then you can try 1 + 3/4, if not enough, then 2 teaspoons. Probably not worth more.

Brought THANKS for the recipe! The dough is excellent! 2 days in a row I feed homemade pies.
Here I made pies with canned fish, onions and barley, the dough was made on the recommended dietary mode:
Lean dough in Panasinic bread maker (universal)

And here I was making pies with baked chicken breast and onions. The dough is mixed in "basic" mode:

According to my observations, the dough mixed on the diet mode is easier to work with, it is not as sticky and smoother than on the main mode. She rolled out the dough without flour and butter, on specials. tupperware dough pad. Yeast used SAF - 2 tsp, savory pies - 1 tbsp. l. sugar, otherwise everything is prescription.
fox
How many patties are there from one serving?
Sladolka
fox, I got 16 pies. When you sculpt, they seem to be small, but when baking they grow well and you can't call them babies)) But not giants either))
In general, of course, it depends on how you cut the dough)) I think that, on average, from 12 to 16 pieces from one portion of the dough, depending on the size of the pies))
prubul
Who made these pies, write, how long do the pies stay stale? Start one serving or 2 at once?

In modern standards, 1 tbsp = 15 ml.The volume of the measuring table attached to the Panasonic HP is also = 15 ml.

15 ml of vegetable oil weighs about 12-15 grams, depending on the density of the oil. That is, 6 tbsp l = 72-90 gr.

Dough at the end of the program HP "Yeast dough"
What kind of bread maker was used to make the dough? How was the yeast laid?
Marysya27
Waist, Natalia, the dough was made in HP Moulinex RZ 710100. Today, at first I put everything in a bucket except flour, then I put the yeast. They are min. 15-20 lay down, began to wander. Then she fell asleep with flour. And in HP. I did so because the yeast was already in the residue, not quite fresh.
I also made this dough in a variant: I put in all the ingredients, except for flour and yeast. Then flour, and on top of the flour crumbled yeast and lightly rubbed it with a top layer of flour.
Like this:

15 ml of vegetable oil weighs about 12-15 grams

Just kneaded this dough with corn oil).

I weighed it on purpose, although I always put butter on the basis that there are 15 grams in one tablespoon.

So 6 tbsp. l. corn oil pulled exactly 90 grams.

The discrepancy with the amount indicated by the author in 30 grams. ...

The dough is very pleasant in consistency turned out, a kind of tender, I will share my eaters' impressions about the pies later.

By the way), my 3 tbsp. l. I pulled sugar by 45 grams. , from the author of the recipe for 80 gr. ...

My 3 tablespoons, even with a sooooo good pea, are more than 75 grams. don't pull ...

That's why I love gram recipes.

IMHO They are more reliable.
MANUELA_555
Can you knead this recipe on some fast mode? And then 3 hours 15 minutes is too long for creations in the night

Can you knead this recipe on some fast mode?
MANUELA_555, Vera, the program "Yeast dough" for some CP - 1h 30min. You can probably only knead 30 'and immediately use it for its intended purpose. But the result will be somewhat different.
And today I am with the leaven version. After just kneading and overnight in the refrigerator:

Then the program "Rain dough" and one more kneading with a small addition of flour. And pies with cherries

And if there is no bread maker?
How much time to give on the approach? And is it necessary to upset?
Marysya27
Podmosvichka, Lenochka, according to the program: 30 '- kneading, 1 hour - proofing. It is possible to besiege once, but not necessarily. Can be kneaded overnight under a film in the refrigerator. In the morning, replace it again, and go
Podmosvichka
Yeah, yeah, I understood
I'll try this and that
thank you dear

I also remembered I tried to replace sugar with honey.I liked the sugar version in this recipe better. I also add a bag of vanilla sugar (10g).
