Ingredients

Beef brisket 1 kg.
Bulb onions 3 pcs.
Beans 200 gr.
Potatoes 3-4 pcs.
Garlic 100 g
Bell pepper 3 pcs.
Carrot 2 pcs.
Tomato paste 2 tbsp. l
Cabbage 500 gr.
Vegetable oil 250 gr.
Salt 50 gr.

Cooking method

  • The main difference from traditional dishes of other cuisines is the frying of products in overheated oil, typical of the Crimean Tatar cuisine
  • We put the beans to cook in a separate bowl without a lid. Cut the meat into small pieces and fry in oil. In the process of frying, add chopped carrots (I usually cut into strips, but you can also grate), bell peppers (I used pickled bell peppers), onions, garlic, tomato paste (can be replaced with fresh tomatoes 3 - 4 pcs.) Season with spices on your taste. After frying the tomato, pour boiling water, add the beans, chopped cabbage, potatoes and cook until tender.

I mainly use spices in my first course
1. Dried tomatoes (ground or flakes)
2. Sweet dried peppers (flakes)
3. Savory (Uzbek dzhambul)
4. Dill
5. Basil, aka Raykhon, or Regan

All in equal shares. for a 5 liter cauldron about 20-25 grams of the mixture, whoever wants more concentrated can increase the dose to 40-45 grams
