Cake:

Cocoa powder 3 tbsp. l.
Sugar 90 g
Custard cream:
Egg yolk
Flour 1 tbsp. l. with top
Milk 150 ml
Vanilla 1/2 g
Butter 80 g
Chocolate muss:
Cream 35% 400 ml
Black chocolate 200 g
Gelatin 6 g
Interlayer:
Cherries (I have sweet ones in their own juice) 400 g
Starch (any) 1 tbsp. l.
Candy (Maltersers, optional, you can decorate the cake as you like) 400 g

Cooking method

  • The idea of ​​decorating the cake with Maltersers milky waffle sweets was taken by me from a Polish culinary site. The cake itself is completely my fantasy! The combination of chocolate, cherry and custard is very favorite in my family, and you try and decide for yourself!
  • Cake:
  • Whisk the proteins 6 pcs into a cool foam and gradually add 90 g of sugar, then add 1 spoonful of sifted flour with cocoa, stirring gently with a spatula.
  • Place the dough in a mold 23 cm in diameter, cover the bottom of which with baking paper, put the mold with the dough in a cold oven and bake at 175 "for 30-35 minutes. Focus on your oven! Cool the finished cake on a wire rack.

  • Custard:
  • Grind the yolks with sugar 60 g, add vanilla, flour 1 tbsp. l. and milk - mix everything thoroughly so that there are no lumps and over low heat, stirring constantly, so as not to burn, brew the cream.
  • The readiness of the cream is determined by the presence of buns, the cream seems to be breathing. It should be thick. Cover the finished cream with cling film, sticking it to the surface and cool completely.

  • Gradually add butter to the cooled cold cream, whipping with a mixer each time. Place the finished cream in the refrigerator.

  • Chocolate muss:
  • Heat 100 ml of cream to 90 "C, place chopped chocolate in them, let stand for 2 minutes and stir well until smooth.
  • Soak gelatin in a small amount of cold water.
  • Squeeze out the swollen gelatin and dissolve in 2-3 tbsp. l. heated cream.
  • Whip the remaining cream until firm, soft peaks, add hot gelatin and melted chocolate, mix with a spatula.

  • Assembly:
  • Place the cake on a serving plate and cover with cream.

  • Heat the cherries and 100 ml of juice from it, dilute the starch in a small amount of juice and pour over the cherries, constantly stirring them, to make a gelatinous cherry. Cool and line the cherries on top of the cream.

  • Cover the cake with a ring from the mold, but do not fasten it so that there is a small gap between the edge of the cake and the sides. Pour chocolate mousse over the cake so that it completely covers the cake and hit the dish a couple of times on the countertop so that the mousse thickens and fits well into the left gap. Cover with cling film and refrigerate for 5-6 hours.
