Ingredients

flour 2.7 cups - 360g
hard boiled eggs 2 pcs
softened butter 200 g (I have 150g)
sugar 65 -80 g
raw egg yolk 1 PC
protein for lubrication 1 PC
currant jam (I have rum fruit)
lemon zest 1 tsp

Cooking method

  • Several recipes for the favorite Viennese pastries remained unpublished. Here is one of them. The ingredients were listed in the "cups" and had to be converted into grams that are convenient for all of us.
  • The recipe is simple, like all Austrian recipes, because simple housewives invented them. Chefs from noble families added a touch of polish to peasant recipes and added new dishes to the "high-ranking" menu. Similar recipes were successfully prepared by our mothers, but only recently did we find out that they are from Vienna.
  • Grate the boiled eggs. We combine all the ingredients, except for protein and jam.
  • Roll out the dough into a layer, 0.3 cm thick and cut into squares, measuring 7.5 x 7.5. We make cuts in them in the corners, stepping back from the edge 0.5 cm
  • Vienna envelopes
  • Put 1 teaspoon of jam in the middle of each square. I instead used fruit infused with alcohol from Chuchelka's Rum Pot. These baking fruits were tastier than any jam.

  • Now we connect the corners of the squares. Combine and pinch carefully - the dough is fat.

  • We place the cookies in a parchment-covered mold, grease with protein and bake for 25-30 minutes at 150 * C.

  • Loose cookies with a wonderful aroma are simply heavenly delight.

A puff pastry with patisier cream has a similar shape of the Austrian cake. But that is another story...
