Salmon pie "Goldfish"

Salmon Pie Goldfish

Ingredients

Water 250 ml
Live yeast 50 g
Margarine or butter 400 g
Egg 3 pcs.
Salt 1 tsp
Sugar 1 tsp
Salmon fillet (chum salmon) 1 kg
Rice 1 large mug
Mayonnaise 250 g
Bulb onions 3 large heads
Flour 800 - 900 g
Vegetable oil 50 g

Cooking method

  • Salmon Pie Goldfish
  • Cut salmon fillet into slices, mix with mayonnaise, salt and pepper to taste.
  • Dissolve yeast in a glass of warm water, adding 1 tsp. sugar, leave until foam appears.
  • Grate margarine (or butter), mixing with flour (about 3 glasses). For Kenwood owners: cut the margarine into small cubes, add flour and mix with a hook until coarse.
  • Add to mass 2 eggs, water with yeast and salt.
  • Knead the dough, forming a ball (in Kenwood to the bun), adding flour.
  • Put the resulting dough in a plastic bag and put it in the freezer for about 40 - 50 minutes.
  • Boil the rice until semi-cooked (this is important, because then the rice will absorb excess liquid from the filling).
  • Cut the onion into thin half rings and sauté in refined vegetable oil.
  • Remove the dough from the freezer (it has increased in volume). Knead into a ball, dusting with flour if necessary. Divide the dough into 3 parts. The largest one is on the bottom of the pie, the middle one is on the top, the smallest one is for decorations.
  • Roll out the dough, put in a baking sheet, forming sides, carefully leveling in shape.
  • Put rice, onion on top, then fish.
  • Roll out the middle part of the dough, cover the filling, pinch the edges.
  • Make a hole in the center of the cake for steam to escape.
  • Decorate with the rest of the dough as you wish, I have fish)
  • Grease the cake with a beaten egg (I grease the decorations with the egg, and the background with mayonnaise))

Kirks, the dough turned out to be 1700 g with kopecks, I divided it like this: 750 g for the bottom, 550 for the top, and the remaining 400 for decorations. But I should note that it rolled out quite thinly, and the top layer came out translucent in places. I covered these flaws with algae.The size of the cake is 33x38 cm.
