Ingredients

Dough:
eggs 8 pcs.
sugar 150 g
salt 1/4 tsp
baking powder 1 tsp
flour 150 g
butter 150 g
Cream:
water 50 ml.
cream 33% 1 l.
sugar 200 g
Glaze:
lemon juice 2 tsp
cream 33% 130 ml.
salt 1/4 tsp
water 100 ml.
starch 10 g
gelatin 5 g
sugar 150 g

Cooking method

  • Cream:
  • Let's start by making caramel for the cream.
  • Pour sugar into a saucepan with a thick bottom, add water and put on high heat. Melt the sugar and cook the caramel for two minutes, until dark brown.
  • Without removing from heat, stirring constantly, add 300 ml of cream at room temperature.
  • Bring to a boil and sugar is completely dissolved.
  • Pour into a large flat bowl.
  • Refrigerate for 2-3 hours.

  • We coat each cake well with cream.

  • Melt over high heat and simmer for 2 minutes.
  • Remove from heat and gently, stirring constantly, add 70 ml of warm water and cream. Add 1/4 tsp. salt.
  • Put back on fire and bring to a boil.
  • Remove from heat and add starch and swollen gelatin. Mix everything thoroughly and strain.
  • Leave on the table to cool to 30aboutFROM.

Note
