Note

Fenugreek -

Multigrain bread with shamballa in the Brand 3801 programmable bread maker

Fenugreek hay, or Greek fenugreek, or Shambhala [1] (Latin Trigonélla foénum-graécum) is an annual plant; species of the genus Fenugreek of the Legume family (subfamily Moths).

I grow this fenugreek on my site, I love it very much because of the nut-mushroom smell. I always add to soups, vegetable and meat dishes.
I always add a pinch of crushed seeds to rye bread.

"In many Asian countries, this plant is considered the best female medicine."

“Fenugreek seeds have the ability to lower the level of harmful cholesterol and glucose, and have a positive effect on the treatment of polycystic ovary disease. By the way, this plant is a natural phytoestrogen.
Regular consumption of fenugreek seeds reduces and normalizes blood sugar levels, which is very important for people with diabetes, lowers blood pressure, has a preventive effect on the cardiovascular system, prevents the development of breast and intestinal cancer... Fenugreek seeds are used to treat colds, tuberculosis, cough, stomach, spleen, and skin diseases. "

Information - from the free internet.

Cucumber pickle.
"In the old days, various pickles - from cucumbers, pickled apples, tomatoes, sauerkraut - were obligatory served with meat and vegetable dishes. By the way, by the beginning of spring, a considerable part of the nutrients contained in fresh fruits and vegetables miraculously passes into such pickles. ...
Cucumber pickle is an excellent food and healing product, while an inexpensive and accessible source of various trace elements, in particular copper. The best option will, of course, be if the brine is not too salty, so when preparing homemade pickled cucumbers, try to add less salt, and more - a variety of spices and herbs.

This brine produces delicious pickles, various sauces, as well as dough for cookies, pies, dumplings, pancakes or flat cakes. Baked bread based on cucumber pickle turns out to be not only tasty and fragrant, but also incredibly healthy. "

I sincerely congratulate all friends on the spring holiday and sincerely wish you health!

Olya, what a wonderful bread in honor of the holiday! For the first time I tried fenugreek in Bulgarian spices (my daughter brought it from there). There it is also used everywhere. Thanks for the useful information!
Happy holiday to you!

Hurray, friends!

A beautiful bread! I also use fenugreek. It is difficult to buy it from us. And you grow it yourself .... Can you find it antiresno in the seed store?
BlackHairedGirl
Girls, I have fenugreek seeds, tell me if you can grind it in a coffee grinder? I'm afraid to ruin the grinder ...
MariV
tuskarora, Lena, sold, of course - in Indian spices, is there such a store in Kharkov? If there is a piece of land, it is not difficult to grow the seeds yourself - soak the seeds before planting, like peas, and sow when the threat of frost has passed. Fresh grass does not smell - it must be dried.

BlackHairedGirl, Tanya, it is not worth it in a coffee grinder - it is better in a spice grinder - either manual or electric. If the seeds are fresh, they must be dried, they will be better ground.
You can use dry grass - it has the same wonderful smell, if not stale! I first learned about this herb - I went to smell at some exhibition at VDNKh.

Olya! Rich bread! Very nice crumb! I have everything for him. Only rye malt, not white ... Go, and go for rye? Because I don't see white malt here.
Oh yes! And even dry leaf fenugreek is available. The smell from the boxes is so delicate, subtle!
Thanks for the interesting recipe!
I will try!

Olya! I baked your bread! A ready-made mixture from "Pudov" "Borodinsky bread" was just hanging out in my kitchen. I drank it in HP. Fenugreek laid leaf. Looks like she didn't put in enough. He was lost against the background of other smells. Or maybe he was not lost, but together with everything else he gave the bread an awesome aroma!
Apparently, my flour was a little dry and a little brine was not enough bread to rise to the end. You can clearly see from the crust how the dough stretched up and torn from what was slightly thick. And, something, my hand trembled and I sprinkled quite a bit of flaxseed ... Next time, (and it will definitely be!), I will put much more of it. Oh, I forgot to say that I baked in Panas - SD 257 at "Rye". After the first kneading, I took out a spatula and made a "hat" on the kolobok. I put it back in the oven and then just the whole family crawled into the kitchen and worried about the awesome smells until the end of baking!
MariV
Irunyahow happy I am for you! To health and joy in the house! Don't put a lot of fenugreek - everything is fine in moderation! Regarding - high-low-cracked at the top, not cracked - what's the difference, if only you and your loved ones liked it!
