Cooking method

  • Calamarat is a typical Neapolitan pasta. It is prepared from squid and the original paste of the same name, which in its shape resembles a small squid cut into rings. The composition of the products used in this pasta is the most Mediterranean - calamari, olive oil, cherry tomatoes, garlic, capers, parsley and olives. And, of course, Italian wine, the quality of which greatly affects the taste of the dish. The calorie content directly depends on the amount of olive oil used. Prepares quickly, in 15 minutes.
  • A very tasty and healthy, light dish, especially if you cook the pasta itself according to the rules, that is, al dente. Ideally, buy small squid, the rings of which in the cut will coincide in diameter with the diameter of the paste itself.
  • Adding onions is not quite a classic option, but I met this one too.
  • I took the southern, Sardinian wine from old stocks, I highly recommend it for pasta and risotto. It's called "Vermentino". Soft, aromatic, fruity, not sour.

  • - Let's put the pasta to cook. Usually the correct calamarat paste is cooked to al dente for 14-15 minutes (see package directions)
  • - Crush the garlic with a fork, cut the onion into rings. Let's start frying in a little olive oil. I took olive oil, which I insisted myself on rosemary, oregano, allspice and a pinch of dry Italian herbs with the addition of a clove of garlic and a microscopic piece of hot pepper.

  • - As soon as the onion starts to brown, put the squid, cut into rings and peeled from the film. Let it simmer over low heat for a couple of minutes.

  • - Add capers to the squid, without removing salt and olives, mix and pour in a little wine to cover the contents of the saucepan.
  • - Lay the top cut cherry tomatoes cut into quarters. Let's pepper. Salt. Without interfering, cover with a lid and simmer until the end of cooking the pasta. The total time is about 15 minutes.
  • Calamarata Neapolitan Pasta
  • - Salt the pasta, put it on warmed plates and spread the squid with sauce on top. Sprinkle with the Italians' favorite parsley. I also like cilantro.

Note

I added a little, literally symbolically, thin tops of stalk celery, you can add a little sweet paprika.
You don't need a lot of celery, it always prevails in the taste of a dish.
Capers and more can be added to your taste.
I hardly salted the sauce, because I have salted capers, they are all stored just in sea salt. You do not need to rinse them before laying.
Tomatoes should be bright, sweet! Sometimes I do it with dried and pickled in wine vinegar.
I cooked for two, they don't cook such pasta for future use.
