Curd (fatty) 200 g

Vanilla sugar 1 tsp
Corn starch 2 tbsp
Sugar 50 g
Salt
Lemon zest
Frozen black currant 100 g
Sauce
Milk 125 ml
Sour cream 125 ml
Eggs 2 pcs
Powdered sugar 30 g
Vanilla sugar 1 tsp

Cooking method

  • Bake pancakes. I decided to use a frying pan over a crepe maker.

  • It is better to measure all the ingredients in advance.
  • Making the filling:
  • Beat butter, icing sugar, vanilla sugar, cornstarch, salt, lemon zest until fluffy. Add egg yolks one at a time, then curd. Beat the whites with sugar and add to the curd mass. In the original recipe, raisins soaked in rum are added to the mass. Instead of raisins, I used frozen black currant and did not add it to the curd mixture, but just sprinkled it on top. Place the pancakes on the board so that one overlaps the other, forming a strip. Distribute part of the curd mixture, wrap in a long "sausage".

  • According to the recipe, this "sausage" must be cut and placed in a rectangular shape. Since my shape is round, I decided not to cut, but to lay the "sausages" entirely. Here's how I did it. The outer row is 4 pancakes, the next row is 3 pancakes, then 2, and the middle is 1.

  • For the sauce, beat eggs, sour cream, milk, powdered sugar and vanilla sugar together. Pour the pancakes laid in the form, put in the oven until browning.
