Ischia is an Italian island, and already from the name it becomes clear that we are talking about Italian cuisine. And Neapolitan cuisine is deservedly considered one of the most delicious in the world! Rabbits are considered a gastronomic symbol of the island of Ischia, which are raised here not in cages, but in earthen pits, where they can live, almost as if in freedom, and feed the rabbits with grass, just like in nature.
  • So, let's begin!
  • In order for you to have a truly unique dish, you need to consider two points. Choose a rabbit weighing 1-1.2 kg along with a heart and liver and follow the recipe without overdoing it with spices... This is especially true of rosemary, which gives a spicy touch to a dish, but can completely ruin it if you put a little more of it! Remember this!
  • The rabbit, washed and soaked in water, dry with a towel and chop into portions.

  • Pour olive oil into a frying pan and fry the pieces of rabbit meat on both sides together with a head of garlic cut in half until golden brown over high heat. Last of all, fry the heart and liver.

If the sauce boils a lot, stir occasionally the meat and add the broth, but remember that the sauce should not turn out to be very runny.
