Instant coffee 2 tsp
Salt in rusks (optional) 1-2 pinches
Cream:
Butter at room temperature 100 g
Egg 1 PC.
Sugar 1/2 tbsp.
Vanillin 1 / 2-1 / 3 bag
For decor: 1-2 tbsp. l.
Ground and whole walnut

Cooking method

  • One of the most beautiful places in Germany, a real national pride is the unique palace and park complex Sanssouci (from the French sans souci - no worries) in the city of Potsdam. A truly magnificent palace and a wonderful, unique in its beauty park. This unique complex is included in the UNESCO World Heritage List.
  • In 1743, King Frederick II the Great, tired of the wars, on his way from Berlin to Potsdam, noticed a very picturesque hill, from which a very beautiful view opened up. He decided to build a summer royal residence here, where he could rest with his soul, study philosophy and music.

  • On the slopes of the hill, terraces for vineyards were arranged, and in 1745 construction began on the palace, which was to become the personal refuge of King Frederick. The king personally made many sketches and approved the finished projects. The project was directed by one of the prominent architects of the time, Georg Wenceslaus von Knobelsdorf.

  • The summer palace of Sanssouci itself is located on the top of the hill. It is a very beautiful long one-story building with large windows that are both doors and an oval pavilion in the center.
  • The Sanssouci Palace is surrounded by ancient oaks, lindens, red chestnuts. The main alley of the complex leads to rotundas with fountains, marvelous sculptures, as if frozen in a dance and inviting to retire and relax in the greenery of openwork pavilions.

  • Next to the summer palace is the Art Gallery, which simply amazes with its magnificence and luxury. This is one of the oldest museums in Germany. Here are the works of many great artists. Frederick II personally ordered to buy paintings by Jean-Baptiste Pater, Antoine Watteau, Tatian, Nicola Lancre.

  • The Russian Tsar Nicholas I also liked to visit Sanssouci with his wife, who was the sister of Frederick I.
  • King Frederick II the Great died and was buried in Sanssouci, his favorite place, created by him and became one of the most beautiful palace and park complexes not only in Germany, but throughout the world.
  • The "No worries (Sanssouci)" cold rusks cake does not need baking, you just need to put it in a cold place for a couple of hours and that's it - the cake is ready!

  • I found the recipe "German cold coffee cake Sanssouci" in a tear-off calendar, remember those ?! I went online ...and here, as a blueprint, on each site a recipe word for word from this calendar .... on German sites I could not find such a recipe.
  • I decided to do half the norm of the recipe on the calendar. I forgot a bit in the process and got it wrong. Therefore, I write the recipe as I did.
  • The foundation:
  • Boil 1.5 cups of milk. Add 2 tsp to hot milk. with a slide of instant coffee (you can also brew ground coffee, but the taste will be different, not so rich) and vanillin. When the coffee is dissolved, pour one glass (250 ml) of hot milk into two glasses of ground crackers (like fine breadcrumbs). My crackers turned out to be salty, so I also added 1 tbsp. l. with a slide of powdered sugar. Mix the crackers immediately with a spoon, and then rub by hand. We cover the container with breadcrumbs with a lid.
  • Cream:
  • Grind one egg with 1/2 glass of sugar, do not beat until peaks, but grind until barely noticeable whitening, I mixed with a hand whisk:

  • Add 125 ml cooled milk to the egg mixture, if there is less milk left (it evaporated a little for me - then add to the required amount). Put the saucepan with the milk and egg mixture over medium heat and constantly interfering with a whisk, wait for the cream to thicken, then turn off the heat, the cream becomes thicker, now it has already boiled - remove it from the stove. Cool in cold water while stirring. Add butter at room temperature in 2 doses to the completely cooled custard, stirring well each time.
  • In the photo, a container with breadcrumbs + ready-made cream and a container with a brewed egg-milk mixture (I miscalculated and cooked more than necessary):

  • Assembly:
  • Add half of the cream to the crackers and mix. Put the rusk mass on a serving dish and shape it into the desired shape. Put the other half of the cream on top, coat the sides a little and sprinkle the cake with ground walnuts, decorate. According to the recipe, you need to put it in the refrigerator for 2 hours, but mine stood the night, because there was no time to decorate, and I planned to take pictures during the day.
  • What can I say! Firstly, I was very surprised when I tried the cake. Moderately soft mass, very complementary to the cream, so coffee and satisfying that it is not even worth making a full portion! One small bite is very full. Secondly, it turned out to be very tasty! I did not expect such a result, sanctimonial!

Note

My additions: you can cook a little more cream, but just a little (+20 ml of milk and butter proportionally), and add it to the rusk part, to which you can add nuts (but without all this it turned out very tasty). In the original recipe, there were 4 stk of crackers for 2 glasses of milk, perhaps it was supposed to be crumbs in cubes, otherwise this amount of milk for ground crackers would not be enough! And do not forget to add a couple of pinches of salt, my salty croutons really set off the coffee taste!
