Ingredients

Dough:
dry yeast 0.25 tsp
wheat flour of the highest grade 100 g
water 80 g

wheat flour of the highest grade 150-160 g
milk 90 g
salt 4 g
sugar 10 g
butter 20 g
sesame 30 g

Cooking method

  • Dough:
  • Mix yeast with flour. Add water, knead.
  • Leave to ferment at room temperature for 10-12 hours.
  • Dough:
  • Mix yeast with flour (leave one tablespoon of flour), add dough, warm milk and sugar. Knead for 7 minutes.
  • Add softened butter, salt and remaining flour. Continue mixing.
  • After 5-6 minutes add sesame seeds to the dough.
  • Knead a soft, non-sticky dough.
  • Leave to ferment for an hour and a half. In the middle of fermentation, knead the dough once.
  • Lightly dust the table with flour. Lay out the dough, knead and divide into six equal parts.
  • Form round rolls. Transfer to a baking dish or baking sheet lined with baking paper.
  • Proofing under the foil for about an hour.
  • Bake the rolls in an oven preheated to 230C (convection 210C) degrees with steam for the first 7-8 minutes, then reduce the temperature to 200C (convection 180C) degrees and bring the rolls to readiness. The total baking time for me was 35 minutes.
  • Put the finished rolls on the wire rack.
