Sour Mushroom Soup (Saure Schwamme) in a multicooker Steba DD1 and DD2

Ingredients

Forest mushrooms 800-1000g
bulb 2 pcs
pickled cucumbers 100-150g
bacon 100g
potatoes 500g
bouillon 1L
sugar 1 tbsp. l.
wine vinegar 2 tbsp. l.
flour 1-2 tbsp. l.
thyme, cumin, allspice, salt, herbs

Cooking method

  • This soup is widespread in the Ore Mountains of Saxony. Mushrooms can be fresh or frozen, but always wild. Turn on "Roast" for 20 minutes. Finely chop the onions and fry with bacon for 5 minutes, add flour and chopped mushrooms (I have chanterelles) and fry until the end of the program. Finely chop the potatoes and cucumbers (I have salted). Add all other ingredients except vinegar. Set the "Soup" program to 0.7 10 minutes. After unblocking, add wine vinegar or 3-4 tbsp. l. pickle from cucumbers. Simple and delicious!

Time for preparing:

20 min + 10 min

Cooking program:

Roasting, Soup 0.7

Lina, thanks for the recipe! Very timely for me, just all the ingredients are in stock. I will definitely try this version of mushroom soup.

Galina, I also attached my frozen ones. I think this recipe will go very well in the mushroom season, since the main ingredient here is mushrooms.

Thank you! I love and often cook mushroom soups. Yours will add to my "repertoire". The year was fruitful for mushrooms, there are still briquettes in the freezer.

Special thanks for the link. Somehow I haven't come across this site until now.
