  • Add sugar and yeast to a warm liquid (I have whey), wait a few minutes for the yeast to disperse. Add butter, protein (and I mixed up and added the yolk, and smeared it with protein), salt and sift the flour. We knead a dense dough, like this

We dust the working surface with flour, roll out the dough 1 cm thick, cut out a large circle with improvised objects, and make a small circle in it. We shift the rings to a baking sheet, I additionally to my favorite silicone mat, grease the yolk + water (and I was mistaken and smeared it with protein) and sprinkle with sesame seeds. If you sprinkle, then the sesame leaves less (4 tbsp. L.), And if the rings on both sides are lubricated and rolled (as per the recipe) in sesame, then much more of it is needed, that is, 200 grams and will go away. We let them rise a little, about half the height of the dough, they will become so swollen and send them to an oven preheated to 180g for 20 minutes or 200g for 15 minutes. I did not collect the bagel holes in the dough again, but greased them and sprinkled them with granulated sugar. The rings are good! If anyone wants sweets, then more sugar is needed, they are not sweet, they are just sweet, but tasty!
