Yeast waffles with rye and whole grain flour

Ingredients

Fresh yeast 10 gr. (or dry 1 tsp)
Rustic flour 500 gr. (250 white + 100 rye + 100 whole grain or white with bran)
Milk 500 ml (I took zero, but you can use any liquid)
Vegetable oil 3 tbsp. l. (took hazelnut)
Fructose (sugar) 2-3 st. l.
Salt 3/4 tsp
Eggs 4 things.
Baking powder 0.5 tsp

Cooking method

  • I continue to experiment on the selection of not very fatty dough with low calorie content and whole flour.
  • This time she took French flour "Country Mix" (Pain de Campagne).
  • I often use it in baking bread and have already found the composition of our usual flour, which replaces this mixture. This is about 2 parts of white bakery flour, 1 part each peeled rye and whole grain, that is, whole wheat wallpaper (or ordinary white with 3 tablespoons of bran)
  • Dissolve fresh yeast in warm milk with sugar and butter. let stand for 10 minutes. If the yeast is dry, you do not need to dilute it, mix it with dry flour. Knead the dough like thick pancakes, add milk if necessary. Leave for 2 hours or until the dough doubles. Then separate the yolks and stir into the dough. Whisk the whites into a thick foam with salt and baking powder and carefully combine with the dough.
  • Baked in a Philips 3 in 1 sandwich maker, with a waffle maker
  • Half the dough was mixed with dry fried onions, finely chopped doctor's sausage and suluguni cheese. The result is snack waffles.
  • The other half was mixed with a finely chopped green apple. This is a dessert option.
  • I put the dough yesterday, after rising, I mixed it and put it in the refrigerator, and in the morning I mixed the dough that had risen again in the refrigerator with eggs, fillings and baked.
  • The son, who is our only "working" on Saturday, went to school unusually happy after a morning cappuccino with waffles
