Ingredients

Fresh white cabbage 1 small head of cabbage
Table vinegar (I have white wine) 150 ml
Bouillon 250 ml
Caraway 1 tbsp. l.
Salt taste
Sugar taste
White pepper (I have a mixture of peppers) taste
Smoked pork belly with fat 100 g (50 g)

Cooking method

  • Fresh cabbage salad is not often found in German cuisine! Sour-sour sauerkraut is used more and more.
  • This recipe from a German book interested me in the simplicity of preparation and the use of fresh cabbage.
  • I made a salad from a quarter of a head of cabbage to try. The head of cabbage was thick-fiber, but not oak and sweet.
  • Since the weight of the head of cabbage was not specified in the recipe, I also adjusted the taste to our family preferences. According to the version of the sugar recipe, it was necessary to add 1 tsp, I added to taste, since the Germans love the purely sour taste of cabbage, and we soften the acid a little with sugar or honey.
  • Preparation
  • - Finely chop the cabbage and pour over salted boiling water, let stand for a couple of minutes and drain.

  • - While the cabbage is blanching, make the marinade. Mix vinegar with warm broth, add salt and sugar to taste.
  • - Drain the water from the cabbage and squeeze lightly. Season the cabbage, sprinkle with caraway seeds and pour over the marinade while it is warm. Press down with a plate so that the marinade completely covers the cabbage.

  • - Fry the diced brisket and add to the cabbage, stir and leave to marinate for at least an hour.
  • It turned out to be somewhat unusual for us, but tasty and original salad.
  • The thinner you cut the cabbage, the tastier the salad! But here it also depends on the cabbage itself :)
