Tashkent salad

Ingredients

Green radish 400-500 g
Boiled beef 150-200 g
Bulb onions 1 PC. average
Boiled eggs (option) 2 pcs.
Vegetable oil a little bit
Salt pepper taste
Mayonnaise
Fresh chopped greens 2-3 st. l.

Cooking method

  • I did not find the recipe for the "Tashkent" salad on our Mcooker and decided to fill this gap.
  • It is prepared very simply, there are few ingredients in its composition, and the result is always pleasing.
  • Like any salad, "Tashkent" is different in the composition of the ingredients. Basic only: radish, meat, onions and herbs. For example, I don't add eggs, because then the salad starts to look like Olivier in an amazing way. There is an option in which, in addition to eggs, mayonnaise is not also used; instead, vegetable oil and vinegar are used in the dressing. In such a salad, by the way, pomegranate seeds go very well, a little, a handful - for decoration. Choose any option to your liking, just do not mix everything in one heap: eggs, and pomegranate, and mayonnaise, it will not be very tasty. But this is just my opinion.
  • So, we clean the radish and chop it with not such a thick straw. I used a Burner shredder with a 3.5 mm straw attachment. We also cut the boiled meat into strips. Fry the onions, chopped in half rings, until slightly golden brown in a very small amount of vegetable oil, literally minimal, so that the salad does not become too fat later. Finely chop the greens (dill, parsley).
  • Tashkent salad
  • If you want, you can add chopped eggs or simply cut them into circles and then decorate with them the ready-made salad.
  • It remains for us now to mix the whole thing with mayonnaise, add salt and pepper and you can serve it to the table. Do not add too much mayonnaise, otherwise it will "score" all the freshness of the salad. So keep it at a minimum. You will see, it tastes better!
  • Tashkent salad
  • By the way, this salad is good because it can be eaten both immediately and after a few hours. I prefer freshly cooked, and my husband - the present. The choice is yours.
  • Bon appetit to you all!

And, yes, I was going and forgot! I’ll go and change, otherwise I don’t recognize myself. I got used to the big ...muzzle.

I do without mayonnaise with pomegranate. Only the onions are pickled, Lenus should try to fry like you.
I saw it on TV ... did it, they said it was very tasty.
Milashaa
What a delicious salad Elena: nyam: bookmarked, thanks
zairo4ka
OOOOO, how he (this salad) I like it. Thank you for reminding me, for a long time I didn't do it. I also like how Stalik Khankishiev does it. He also called "Uzbekistan". I really love him, it's so delicious to watch

Well, here's another variety - with pickled onions! Thank you, Tanyul, I'll try it somehow.

Zairochka, but not at all! We forget about many recipes until it pops up somewhere.
I'll go and ask what kind of salad Stalik is doing, he hasn't been with him for a long time.

Elena Tim, Helen! What a salad! I remember eating this in Zarik (Zeravshan restaurant)
What if I replace the radish with a daikon? we have no radish in Europe ...

Ha! Come on! Really, chtol ?! Are you from Tashkent, Vikus?
Mirabel
Well, then how do I know about Zeravshan? from there, but already soooo long gone. What's the name of the Alley nearby? Broadway?
Elena Tim
Yeah, yeah, Broadway is! He is still called that out of habit. I myself left for 20 years, but before, when I was young, I hung out all the way in "Uzbek" and in Zeravshan. And not so much in the restaurant itself as ... do you remember the basement there, the Mirage pub? We hung out there.
I was just now going to lay out one recipe from this bar, but first I rummage around here, on the Bread Maker, so as not to run into another "grenade"!
I don't know about the daikon. I only know that it is advised not to confuse it with a radish. He is still a radish (in the good sense of the word)
Well, try to do just a little, maybe you will like it.
And then you will tell us, what if someone else will need it in the absence of radish.
mowgli
A-ha, and I have already cooked a salad based on this - from white radish, yes with carrots, yes with onions, as you said, and, indeed, with half-smoked sausage ...

according to ingredients, it definitely turns out "based on" But it is tasty, nevertheless
mowgli
Lenchik, in shape, a green copy, only white .. I never saw a green one, but. if I see, then the purchase is required!
Elena Tim
Such?
Tashkent salad
mowgli
yes, only oblong
Elena Tim
Come on, it's a radish in Africa, like gritsa ...!
If you liked it, then it's already good!

So you say that REDISKA is supposedly this, but not at all a radish, but I liked it, yeah .. I gave myself a shot so that no one could see and rushed into the room in short dashes so that no one took it away, otherwise my room is distant
Elena Tim
Yes, the devil himself will not understand! Somewhere they write that daikon is a radish, and somewhere it is a kind of white radish!
In short, you did everything right, in the sense that you quickly piled on it and ate it under your pillow!

Oh, don't tell me, Irish. Now everyone needs vitamins urgently. And radish is literally a storehouse of usefulness!

I cooked green - I liked it, but of course I must let it marinate a little, at least in salt
Elena Tim
What for?
Tumanchik
Quote: Elena Tim

What for?
Well, if it is green, then it has a specific smell and sharpness immediately. Rub it and pickle it. Then they leave.
Elena Tim
A, clear. Well, in this salad its mayonnaise pickles, so there is no pungent smell. I would say that salad and radish do not smell.
But of course, the taste and color ...

... in Zeravshan ...
And in this restaurant they baked and sold an unusually tasty Bird's milk cake.
It would be interesting to try it now, many years ago it seemed to me just heavenly bliss.
Lenochka, thank you for the salad and for the pleasant memories!
Bul
Oh, the girls recalled the cake from Zerafshag. My mother drove home from work by the restaurant and brought this cake every day. I ate half a cake but only a soufflé. I didn't like the dough, and the coolest thing was when there was very little of it, just a thin strip at the bottom. (But she was thin! That would be so now ...)
Bul
To be honest, I never liked this radish only if it was soaked in large pieces (so that the smell went away) and with pilaf. And my dad very often made a salad from a coarsely grated radish and poured it with cracklings and onions.
Vasilica
Aaaaaa, Lenka, what a delicious recipe I put up !!! Thank you !
And she gathered the former Tashkent residents, Pakata still needs to whistle.

And I didn't have a chance to hang out in this basement - I was at home, but my husband, this one, yes, with nostalgia recalls his youth.

Anise, You are you from Tashkent too?
And then "Bird's milk", yeah, really - heavenly pleasure! And what queues were behind him, the store, if I'm not mistaken, was on the other side of the restaurant, so there are always such "tails" as in the mausoleum.
Now, of course, it is hardly so tasty anymore.

Eh, and Broadway is not the same.
Bul
Yes, everything is not the same there! And the cakes are not the same for a very long time (if they still do). As the trees in the park cut down this place, it became somehow dead.
nila
Lenochka, I didn't even know that this salad is called Tashkent (Uzbekistan).
I have it in my old records under a different name "Ostrovskaya".
The truth and the ingredients are slightly different. I dug it out specially for clarification. Instead of onions and carrots, I have steamed raisins + toasted walnuts. The dressing is also mayonnaise.
This is another variation seen.
Thank you for reminding me about the salad, I also need to recharge with vitamins, I haven't bought a radish for a long time. I'll also try with onions instead of nuts. Nuts are now dehfetsite, and that onion ...
In short ... I ran for the radish!
MariV
Green radish - she is Margelan, she is loba-lobo-hunlobo 胡萝卜. My husband, after spending his childhood and youth in Tashkent, simply does not recognize a different, black radish. And he taught me to eat it! Today I'll add a salad with onions!

Green radish - she is Margelan, she is loba-lobo-hunlobo 胡萝卜.

She is also a turup (in Uzbek it is pronounced almost like a corpse, the first "u" is swallowed).

My favorite option is to cut the radish into thin strips (I chick on a berner for Korean carrots), carrots, garlic, herbs and poured with kefir (yogurt). Mom loves to season with vinegar and pepper.
