ground cardamom to taste (I didn't want to add)

Cooking method

  • "Russish Brot" is a German biscuit made in the form of letters from the Latin alphabet. The Germans believe that the recipe for these Christmas cookies came to their homeland from St. Petersburg in 1844, and was brought by a baker from Dresden - Hanke Ferdinand Friedrich Wilhelm. The baker built a bakery in Dresden, which he called "German-Russian" and baked the first "Russian brot" there. It is also believed that the prototype of "Russish brota" was created when the ambassador from Russia came, and according to Russian tradition, it is customary to meet with bread and salt, which is why such a cookie was invented.
  • Beat the whites with salt or lemon (whichever you prefer) into a strong foam, add sugar and beat until it dissolves and standing protein mass like meringue. Sift flour and mix with cocoa and spices. Gently mix into the protein mass, however, as I did not try, everything went down for me, put the dough into a bag and put on a baking sheet (I'm on a silicone mat, grease a baking sheet and sprinkle with flour or on parchment) letters. May be sprinkled with sugar before baking. Leave to dry for 15 minutes, then send it to the oven preheated to 180g for 10-15 minutes. Wait until cool slightly and remove from the baking sheet.

I understood why I didn't like it! It turned out that the flour was bad (such a batch was found), baked more cookies from it and understood what was the matter.
