Chestnut Soup Kastaniensuppe (Steba DD1 and DD2)

Ingredients

canned chestnuts 1 can (500g)
butter 2 tbsp. l.
bulb 1 PC
potatoes 2 pcs
pumpkin 350g
celery 100g
dry white wine 200ml
bouillon 1L
cream 20% 200ml
salt, pepper, nutmeg

Cooking method

  • This soup is typical of the Saarland (Southwest Germany). You can use fresh chestnuts, but then you must first bake them with 1 tsp. powdered sugar. I had a jar of ready-made chestnuts (800ml, contains 500g of baked chestnuts in syrup), which I cut into quarters (left a few for serving). Switch on "Roasting" for 20 minutes, after the signal add butter, chopped onion and chestnuts, fry for 8-10 minutes, pour in wine and simmer until the end of the program. Add chopped vegetables, broth (I have chicken), salt and seasonings. Switch on the Soup program 0.7 5 minutes. After unblocking, add cream and puree with a blender. Serve garnished with chestnut halves. Delicate and aromatic soup.

I saw my favorite chestnuts in the name - and ran here! I love them! In the fall, in the season, I buy in large quantities and fry and cook and cook with them!
