Poppy cupcakes (with orange flavor optional)

Ingredients

50 g poppy seeds
120 ml hot milk
130 g softened butter
110 g sugar
2 eggs
3 teaspoons orange zest
3/4 tsp baking powder
190 g flour

Cooking method

  • Fill the dry poppy with hot milk, and let it cool and brew, the more the better, but at least 15-20 minutes))). Beat butter and sugar (and zest, if orange flavor is selected as an additive) until white, fluffy, creamy (it takes me about 15 minutes). Add eggs one at a time, continuing to beat after each. Sift the flour with baking powder. Mix our mixtures at low speed in 3 steps, starting and ending with the flour mixture, to achieve uniformity. Fill the muffin molds with dough 2/3 of the height and bake in an oven preheated to 160 degrees for 17 minutes. Do not bake!

As I already wrote that I love baking with poppy seeds, so I did not waste time on trifles and kneaded a double portion at once.
Question number one.
Is the dough thin or thick enough?
Question number two.
How much the dough rises. Does it come up with a hat from above and does it tear the top of the cupcake?
Question number three
Isn't the temperature low at 1600?
I got a pretty cool dough.
It had to be removed from the spoon with a second spoon to put it into the capsule.
There it did not spread, but it remained in the same position as it fell from the spoon.
The climb was not at all great and without a hat. This suits me very much. But all the caps broke a little on top.
Usually, when placing 35 g of other dough in these forms, it rose to the brim and acted as a little cap. Here, with this setting, the dough did not reach the brim during baking. The next batch was laid in 40 g. It turned out what was needed.
I got out of a double portion of 24 pcs (12 pcs 35 g + 12 pcs 40 g) in molds 5 cm by 3 cm in height and 6 pieces of 60 g in molds 6 cm by 5 cm in height.
Well, now about the taste.
Very gentle and I would say crumbly, but at the same time they really seem to melt in the mouth.
Filled with jellied puréed cherries. Top with Charlotte cream.

Luda, my dough turned out to be thick, but it slipped from the spoon into the capsule by itself, it did not spread in the capsule, there was no cap when baking, the dough rose quite a bit, but did not crack, there were only small folds. My cupcakes turned out to be pale, I held exactly 17 minutes as Olesya wrote.

Galya, I baked it three times. First time at 1600 and in time as Olesya wrote. But when checked with a wooden skewer, the dough turned out to be damp. And it's great raw. So I added up to 25 minutes. I baked the second time at 1800, but less than 20 minutes. Third time at 1900, also 20 minutes. True, there was more test in each capsule.
Usually I bake all cupcakes according to other recipes at a temperature of 180-1900.

- oven. I bake everything at 165, any pastry, this turned out to be enough for my oven. I think you should increase the baking time, because I had them ready in exactly 7 minutes

But IMHO overexposed, waiting for everything golden. We got no cupcakes, but there was moisture inside. I also added sourness, jellied cherries, it turned out harmoniously.
