Ingredients

chicken breast 1 piece (approx. 500 g)
breadcrumbs 2 glasses
corn flour 0.5 cups
sesame white 1 tbsp. the spoon
celery seeds 1 tsp
salt pinch
mayonnaise 0.5 cups
vegetable oil OK. 1 tbsp. spoons

Cooking method

  • I warn you right away that this recipe is contraindicated for non-lovers of "heat-treated Maynesica"!
  • 1. Defrost the breast, but not completely (if chilled, on the contrary, slightly freeze it for about 1 hour). Remove the skin and cut the flesh thinly into slices no more than 1 cm thick and large enough. Cut into slices until there is no skeleton left.
  • 2. Coat the chicken fillet with mayonnaise.
  • 3. Combine bread crumbs, cornmeal, a pinch of salt, sesame and celery seeds. Dip the chicken fillet in this mixture and let it lie on a plate for a while so that the breading is fixed.
  • 4. Lightly grease a non-stick frying pan with a brush with vegetable oil, heat and fry the "chops" in it for 5 minutes on each side over high heat. Before turning over, spray the top side with the remaining oil.
  • 5. Remove from heat and let stand for a little while before serving.

Mayonnaise was homemade, made for the holidays, and, as you know, it does not last long. So this recipe came in handy.
The breast did not have to be beaten due to this method of slicing in a frozen state (as is usually advised for fish). She did not lose juices, and the mayonnaise coating added extra juiciness. The heat treatment was also not long, so the result was pleasing.
The breading is brighter with the addition of cornmeal. If you can't find it, unsweetened cornflakes ground in a blender will do. The sesame seeds are fried and crispy interestingly.
You don't need a lot of salt, be careful with it, because the mayonnaise is already salty.

No fussing with beating, "double-breaded" flour-egg-crackers and complete confidence in the result.
