Ingredients

chicken wings 1.5KG
tea (with a large pile) 3 tbsp
boiling water ~ 1 l or slightly more
spice
salt

Cooking method

  • We often cook chicken wings in the summer season, on the grill. But in winter, when it is -20 outside the window, there can be no question of a brazier, but you want so much .... To create a complete illusion of \ "brazier \" with a crispy crust of wings, in appearance and taste, we use tea marinade.

  • saucepan for 2.5 - 3 liters


  • We cut the wings into 3 parts, the very tails will go to the broth.

  • Smoked chicken wings

  • Pour tea into a saucepan. Pour boiling water over and add spices.

  • Here I will make a small digression. My spices behave better when cooked, so I add them directly to boiling water. Yours may be best added when the brew has cooled down a little. Garlic, for example.

  • I add the spices and cover the pan with a lid. Let the tea brew and cool slightly. I try it with my hand, it should be relatively hot, but not scalding.

  • Smoked chicken wings

  • I lay the wings, stir with my hand and cover them with a lid and forget about them for 2-3 hours. It is possible for the night, but after it has completely cooled down, one must not forget to put it in the refrigerator.
  • The marinated wings are sent to the oven, on a skewer, under the grill.
  • I remove the adhering tea leaves from them and put them in the mold, sprinkling them with salt and stirring them with my hands right in the fomra.
  • in the oven top-bottom 200 degrees
  • in the oven grill 180 degrees + convection
  • on the grill on strong coals.

Note

Tea can be of any kind and type, we need it to give a very strong brew. The best option would be granular. If your tea is weak, put more, it will not get worse.

Spice... I use tandoori, curry leaves and asafoetida. This combination is not the ultimate truth, and your set of spices can be anything. In order not to be mistaken in their choice, just make the infusion without spices. After one preparation in a "pure" form, you will understand what you need to add.

Everything is correct. The wings in the photo are from the oven. If the oven is electric, it is better to cook under a grill / top heating element at 180 degrees with convection.
