Soup-puree Three mushrooms

Ingredients

Fresh champignons 300 gr.
Fresh oyster mushrooms 200 gr.
Frozen porcini mushrooms 200 gr.
Dry porcini mushrooms 6-8 pieces
Leek 1/2 pod
White onion 1/2 onion
Garlic 3-4 teeth
Chicken broth (vegetable) on demand
Dry white wine 50 ml
Salt, pepper, spices taste
Olive oil 1 tbsp. l
Butter 2 tbsp. l.
Cream (sour cream) 100 ml
Greens taste

Cooking method

  • Prepare ingredients.
  • Defrost the frozen porcini mushrooms.
  • Peel, wash and chop the champignons and oyster mushrooms.
  • Cut the leeks into rings. White onions - in half rings. Chop the garlic with a knife.
  • Grind dry porcini mushrooms into flour using a blender or coffee grinder.
  • Soup-puree Three mushrooms
  • In a saucepan with a thick bottom, 1 tbsp. l. olive and 1 tbsp. l. butter, fry the leeks, onions and 2/3 of the garlic for 5-6 minutes.
  • Add ground dry porcini mushroom to the onion. Pour in 50 ml of dry white wine and simmer for a few minutes. Add salt and pepper to taste.
  • Add chopped fresh mushrooms to the saucepan. Pour in broth to coat vegetables and mushrooms (it took me ~ 300 ml of broth). Bring everything to a boil and cook until mushrooms are tender.
  • Soup-puree Three mushrooms
  • While the soup is cooking, cut the defrosted porcini mushrooms. Fry them for 1 tbsp. l. butter with the remaining garlic until tender. Season with your favorite herbs (I added Italian seasoning with salt).

  • Beat ready mushroom soup with an immersion blender. Add cream and mix thoroughly.

  • Pour the soup into bowls, add the fried porcini mushrooms and sprinkle with chopped herbs

I named the soup "three mushrooms" for the following reasons (may Julia Vysotskaya forgive me):
1. Three types of mushrooms are used in the soup - white, oyster mushrooms and champignons.
2. mushrooms are used in three states - fresh, frozen and dry.
Whatever one may say - it turns out three mushrooms. Everything is very simple .

Ksyushk @ -Plushk @, thank you for the principle of making mushroom soup! True, I have it "Two mushrooms" - frozen champignons and dried porcini mushrooms, but nevertheless - very tasty! (there were no oyster mushrooms, I replaced them with puréed chicken meat - nothing so-so replacement, it will do).

It's all husband. His tooth was pulled out yesterday. Yesterday he generally drank only water (he has a WOUND in his mouth !!!), in the morning he deigned to eat thin porridge, and then dreamily he says: "But I remembered about mashed soups ... they are delicious!" Okay, pamper.
