Ingredients

Smoked bacon 250 gr.
Leek 1 PC.
Carrot 2 pcs.
Parsley root 1 PC.
Kohlrabi 1 PC.
Cauliflower 400 gr.
Green beans 100 g
Green pea 100 g
Celery (root) 100 g
Broth (meat or vegetable) 1.2 l.
Allspice, black 2-3 pcs.
Thyme, thyme 1 tsp
Salt taste
Vegetable oil for frying
Garlic 4 cloves

Cooking method

  • Frankfurt Vegetable Soup is easy to prepare. Rich in a variety of vegetables.
  • Quite light if cooked without meat only in vegetable broth.
  • But add smoked bacon for a rich and very satisfying soup.
  • It is especially good in winter, because it is excellent even from frozen vegetables.

  • Peel the carrots and parsley root and chop them into small cubes.
  • We also cut kohlrabi into cubes.
  • Cut the leeks into rings diagonally.
  • We wash and divide the cauliflower into inflorescences.
  • Finely chop the smoked bacon and fry in vegetable oil for just a couple of minutes.
  • (It is best to fry not in a frying pan, but in the saucepan in which the soup will be cooked)

  • Add the leeks to the bacon and fry for another two minutes.
  • (I separated the green part of the onion)

  • Then add the parsley root and carrots, stir and fry a little more.
  • Then add kohlrabi and celery. Mix and fry everything together for another four minutes.

  • ... and green beans with green peas. Stir and fry for another three minutes.

  • Finally it came to the broth ...
  • We transfer our vegetable mixture with bacon to a saucepan and pour in either water or meat broth.
  • Add salt, pepper, thyme, thyme, chopped garlic ...
  • Bring the soup to a boil. We reduce the heat and cook for no more than 15-20 minutes. Add greens before finishing.

Note

I only got by with celery root and carrots. There was only a little white cabbage left ... Finely chopped, slightly fried and added to the soup.
I also replaced thyme with thyme with basil and cumin
