Ingredients

Dough 1:
Boiling water 460 g
Dark molasses (or dark honey) 100 g
Wheat bran 50 g
Hercules flakes (small or large) 85 g
Dough 2:
Wheat flour 600 g
Gluten 70 g
Apple puree (no sugar) 40 g
Sunflower oil 15 g
Dry cranberries (raisins, cherries) 65 g
Fresh yeast 10 g
Salt 10 g
Dry ginger 1/2 tsp
Cinnamon 1 tsp
Nutmeg 1 tsp

Cooking method

  • I offer you a recipe for delicious festive bread. You can also just use the shape of the wreath as an idea (to match your favorite recipe).
  • Preparation:
  • For test 1:
  • Place all ingredients for dough 1 in a fireproof dish.
  • Pour boiling water over the components and leave to soak for 1 to 2 hours (or until completely cooled)
  • In flour, rub the yeast into small crumbs with your fingers.
  • Transfer dough 1 to a mixer bowl, add butter and applesauce, yeast flour, gluten, and salt.
  • Knead the dough.
  • Then add spices and cranberries. Check that the cranberries are well distributed in the dough.

  • Place the dough on a floured table and then divide into 3 equal portions. Cover with a towel and rest for 20 minutes.
  • Roll out the dough from each bun, as for a baguette, about 50 cm in length.

  • When the baguettes are ready, braid them into a thick braid, then join the ends to create a wreath.
  • Line a baking sheet with parchment paper. Transfer the wreath to a baking sheet.

  • Leave the dough to rise at room temperature for about 60 minutes.
  • Turn the oven to 190C and place an empty metal pan.
  • When the dough is done, dust with flour and use scissors to cut the "leaf", cutting horizontally 2-3 times.

  • On the wreath, the leaves will rise by themselves when the bread is baked.
  • Pour 1 cup of water into a hot metal pan, put the bread in the oven, close the door.
  • After 20 minutes, lower the oven temperature to 175C and continue baking for another 20 minutes.
  • Cool on a wire rack.
