Ingredients

For the sauce
cranberry 450 g
Red wine 1/2 cup
sugar 1/2 cup
zest and juice of one orange

Cooking method

  • Thanksgiving was celebrated last Thursday. Well, as usual, they cooked a turkey. True, a whole turkey for our family is too much, therefore they took in parts, 3 legs and 2 breasts with a total weight of about 2.5 kg. Of course, a whole turkey looks much more spectacular when served, well, that's it.
  • Prepare the marinade. To do this, pour water into a high container, add salt, pepper, cloves, sugar, onion chopped into large pieces, freshly grated ginger (if there is no fresh, it doesn’t matter, take ground), garlic crushed with a knife, orange cut into 7-8 parts.

  • We will send our washed and dried turkey to take healthy salt baths for 1-2 days in a cold place. It is necessary that the marinade completely covers our bird.
  • After the time has elapsed, remove the turkey from the marinade, "warm" to room temperature (whoever has enough imagination for that), rinse under running water, dry. Coat with sunflower oil and your favorite spices and place on a baking sheet. Cover the breasts with bacon to make it juicier (optional).
  • I added potatoes to the side dish, placing them in the empty spaces on a baking sheet.

  • We begin to bake the turkey in an oven preheated to 240 degrees for about 30 minutes until our bird is browned. Then cover the turkey with foil on top, reduce the temperature to 180 ° C with convection or to 200 ° C without convection and bake until half done. Remove the foil and bake for another 10 minutes until golden brown.
  • While our bird is baking, let's make the sauce.
  • I must say, this sauce is awesome, suitable for meat and fish, and just spread on bread
  • So, put the cranberries in a stewpan (I had frozen ones, I laid them out straight, without defrosting), add sugar, juice and orange zest, simmer under a closed lid for 10 minutes or until half of the liquid evaporates. Pour in the wine and simmer for another 10 minutes until the consistency of liquid semolina.
