Franconian buttermilk bread (Buttermilchbrot)

Ingredients

wholemeal flour 400 g
wheat flour, premium 100 g
buttermilk or whey 400 ml
muesli or oatmeal 100 g
cottage cheese 125 g
pressed yeast 30 g
sugar 1 tbsp. the spoon
salt 2 tsp
fennel seeds, flaxseeds, sunflower seeds, cumin, milk for lubrication optional

Cooking method

  • Mix 150 gr. wholemeal flour, 150 ml buttermilk, crumbled yeast and sugar until smooth. leave for 15 minutes to activate.

  • Add remaining flour, buttermilk, salt, muesli, cottage cheese, seeds, knead until smooth and leave for 30-40 minutes.

  • Knead until the dough falls behind the bowl. Form a loaf. Grease a baking dish and sprinkle with muesli or seeds. Lay out the dough piece and leave until it increases 2-3 times.

Note

Another recipe for yeast bread from Franconia. The rest of the recipes are all starter. Already the traditional use of coarse flour, however, does not affect the quality of the bread. It grows well. The bread is delicious and light.
