Ingredients

Dough:
dry yeast 3 g
wheat flour c. from 350 g
milk 165 g
yolks 2 pcs
salt 5 g
sugar 50 g
butter 50 g
Filling:
poppy 150 g
milk 150 g
sugar 65 g
almond 50 g
egg 35 g
butter 50 g

Cooking method

  • Dough:
  • Mix yeast with flour (leave 2 tablespoons of flour), add salt, sugar, yolks. Knead for 7-8 minutes, add softened butter and remaining flour. Knead a soft, non-sticky dough.
  • Put the container with the dough in a large plastic bag. Tie the ends of the bag. Put the dough in the refrigerator for 12 hours.
  • Allow the dough to warm up at room temperature for one hour before cutting.
  • At this time, cook stuffing: Grind the poppy seeds in a coffee grinder. Grind the almonds separately in a coffee grinder.
  • Bring milk with sugar to a boil, add poppy seeds and boil the mixture until thick. Add butter to the hot mass, stir until smooth.
  • Cool, add almond flour and egg, stir.
  • Vitushka with poppy seeds
  • Sprinkle the table (preferably a silicone mat) with flour, lay out the dough, roll it into a large layer 2-3 mm thick.
  • Apply the filling evenly, roll up the short side.
  • Lay the roll seam down, fold it in a letter Z, transfer to a 12x23 cm mold, covered with baking paper. Proofing under the foil for two hours.
  • Before planting in the oven, grease the egg with the rest of the egg.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam for the first 10 minutes, then lower the temperature to 190C (convection 170C) degrees and bring to readiness. The total baking time for me was 40 minutes.

300 g walnuts
1 tbsp. l. cocoa powder
130 ml. milk
0.5 eggs
0.5 tsp cinnamon
50 g butter
65-100 g sugar
Grind the nuts in a blender. Mix with sugar and spices, egg. Warm up milk with butter, cool to room temperature. Pour the nut mixture with milk. Let stand for a while, 10-15 minutes.
